Everything about this wine is great except for that annoying green pepper note (elevated pyrazines) that seems to be in every bottle of this I've had recently. Will it fade away with time or become more prominent? Is it going through a stage or were some of the grapes just picked too early? Or am I just very sensitive to pyrazines? 93? (2312 views)

Good acidity with intense flavors on the palate that feels quite a bit more primary than the nose. Long and lingering finish.  Tasted by dream on 1/30/2024 & rated 95 points: In many ways, this is the most complete PL ever made. It simply has more depth and power than other vintages and is beautifully balanced and fine. I think it will get very complex with further age. However, I still get a green pepper note in the wine especially with time in the glass. Some bottles have more of this green note than others and sometimes it can be too much. My guess is that some of the grapes from this vintage were picked too early and therefore some of the vats have this and some don’t. The nose is so deep, layered, and refined with flowing tones of dark red cherries, currants, mint, tobacco leaf, cedar, cranberries, toast, spice box, violets, and some fresh savory herbs. There is a real seamless quality that I'm highly enjoying every time I put my nose into the glass. The Medium/full bodied feel is vibrant and silky with crisp, medium acidity and silky, medium+ tannins. This is right in its zone and it's glorious. There are many many years of life ahead of it to be sure, but the window is wide open as everything is in full harmony right now. (2226 views)

Layers of red currant, green hints, black plum, blackberry, and tobacco on the satin-textured palate. Lower acidity and resolved tannin. Medium-length finish of dark fruit, pencil lead, and sweet resolve. Very nice showing, which might have been even better with a longer decant. Half bottle. (1968 views)

Drinking cool, feminine, filled with cool pepper and mint, clay and tobacco, and that beautiful green component that I cant put my finger on. Really classy and ready to go. Colour: Ruby red with a thin, slightly lighter edge. Aroma / bouquet: Powerful and sturdy bouquet, strikingly youthful, dark fruit and even a hint of paprika. Taste / Aftertaste: Pronounced but pleasant acidity. Strong and powerful wine with clearly present tough tannins, power wine with serious length. Long aftertaste. General / potential: A brilliant Pauillac from the great year 2000, 23 years old but still super-vital and powerful. The impression continues on the palate and the wine is wonderfully complex and complete. Here was a whole orchestra playing a wonderful symphony. Only at the very end a tad of tannic austerity seemed to creep in. (3215 views)

Rich Garnet color - no brown. wonderful fruity nose with cigar box.
Classic older Bordeaux flavor profile - soft, rich, perfumed.

Kind of astringent at first, but got ever so much better with more time and food. Grease seems to agree with Bordeaux! (3415 views)

There is a piquant edge to the red berries on the palate, that softens with air, and a peppery, herbal accent to the red fruits in the finish along with its layers of ripe, dark red fruits. 1 hour of air is sufficient to enjoy the wine.  Tasted by englishman's claret on 6/11/2023 & rated 95 points: 2000 Pauillac (Boston Commanderie de Bordeaux): The 2000 Pichon Comtesse shows well right out of the gate, but really does continue to develop positively over 2-3 hours. The initial curranty fruit and freshly-sharpened pencil mineral develop in intensity and cultivate a lovely cigar wrapper and subtle bacon note. Fresh, incisive, but also with an embracing lushness. Very fine and such a great counterpoint to the Baron and Latour alongside (which are more similar to one another than either is to the Comtesse, as usual). (4623 views)

(Pichon-Lalande) The Green Monster is not at Fenway Park, it is in retail stores and Bordeaux collector's cellars all over the world in the form of this wine. Will it go away? Only time will tell. But under the green is dazzling complexity and one of the great PL's of all time. The nose had of course green cabernet, but also minerality, perfume, cigar box, lead pencil, cocoa, chamomile tea (greenness?). Tannic but a solid core of dark fruits underneath. Long, ripe and epic on the finish. I mean really long. Fantastic and can only get better. We hope. The 2000 Pichon-Lalande odyseey continues.

Red Bordeaux Blend

Red Bordeaux is generally made from a blend of grapes. Permitted grapes are Cabernet Sauvignon, Cabernet Franc, Merlot, Petit Verdot, Malbec and rarely Carménère.Today Carménère is rarely used, with Château Clerc Milon, a fifth growth Bordeaux, being one of the few to still retain Carménère vines. As of July 2019, Bordeaux wineries authorized the use of four new red grapes to combat temperature increases in Bordeaux. These newly approved grapes are Marselan, Touriga Nacional, Castets, and Arinarnoa.

Wineries all over the world aspire to making wines in a Bordeaux style. In 1988, a group of American vintners formed The Meritage Association to identify wines made in this way. Although most Meritage wines come from California, there are members of the Meritage Association in 18 states and five other countries, including Argentina, Australia, Canada, Israel, and Mexico.

The eight precisely defined appellations of the whole of the Médoc (from Blanquefort Brook to the north of the Bordeaux built-up area, almost to the Pointe de Grave) may claim the Médoc appellation. But there is also a specific territory in the north of the peninsula which produces exclusively wines with this appellation. In the great majority, the Médocs come from the north of the peninsula. The great individuality of this region is that the number of vines has increased more recently here than elsewhere, apart from a few isolated spots where vines have grown for many years. Today, the size of the small estate has brought about the development of a powerful co-operative movement. Four co-operatives out of five belong to the group called Unimédoc which ensures aging, bottling and marketing a large proportion of their wines.

Pauillac

Read more detailed information about Pauillac Looking full onto the river from the earliest days, with an important port activity, traces of which go back to ancient times (shipment of bronze as long ago as 2000 B.C.), Pauillac's life has always been intimately linked to the history of wine. Although port activities were at the root of its prosperity, Pauillac had to wait until the eighteenth century when Bordeaux ceased to hold its privileged position to become a wine port. The town then became the natural outlet for the wine production of neighbouring cantons before reaching its zenith in a period when the vineyards were exceptionally prosperous.

The characteristic of the Pauillac terroir is its exceptional relief: the many undulating ridges make it unique morphologically speaking. Highly favourable conditions facilitate the dissection of the layer of gravel. This thin, Garonne gravel from whose very poverty springs great richness, has an extremely effective natural drainage.

With their velvet red colour with a hint of amber, the wines from the Pauillac appellation, full-bodied and rich in tannin, are vigorous. Powerful when young, their aromas of red fruits (black-currant, raspberry) or flowers (violets, roses, irises) melt with the passing of time into a bouquet which is long in the mouth.
Rich and complex, the wines of Pauillac deserve to be laid down for a little longer.

Production conditions (Decree dated November 14, 1936)

In order to have the right to the Pauillac appellation of controlled origin, red wines must:
- come from the commune of Pauillac and from precisely defined parcels in the communes of Cissac, Saint-Julien, Saint-Estèphe and Saint-Sauveur, "excluding the parcels situated on recent alluvium and sand on impermeable subsoils",
- satisfy precise production conditions : grape-varieties (Cabernet-Sauvignon, Cabernet-Franc, Carmenère, Merlot Noir, Petit Verdot, Cot or Malbec), minimum of sugar (178 grammes - 6.27 oz. - per litre of must) degree (an acquired 10°5) base yield (45 hectolitres per hectare).
