 Tasted by Rieslingfan on 2/1/2024: Served blind by the host at our monthly tasting group, this was far and away the last place wine of the night. It smelled pretty good, but on the palate was a distracting, cloying sweetness, and a caramel sugar flavor that was better suited to toddlers' ice cream toppings than fine wine.  Tasted by CDub from the OC on 1/23/2024 & rated 95 points: Like many CalCab drinkers, I have quite a few Caymus’s in the cellar. And like some of my friends, I had stopped drinking it - overly sweet and blah.
So today is a Tuesday, my favorite night to Wine Not, and I decided to pull this. OMG what a difference! Blackberry, tart red cherry and mushroom on the nose. The cloying sweetness? Gone. And is that a touch of anise in there? Mellow black and red fruit on the pallet, much more balanced than before. And the tannins! Smooth, and long long long with gentle touch of …vanilla? I mean the tannins are still rolling while I type this.
Maybe 12 years in the bottle was what this wine needed. (PS, I’m a tough grader). (2017 views)

 Tasted by VinhoVerde on 11/11/2023 & rated 93 points: Deep red color. Fragrant spicy oak and jammy fruit bouquet. On the palate, massive fruit extract and warm. Almost liqueur-like. Modest tannins lurking underneath, but the fruit totally dominates. Long finish.
I know, the Caymus style Cabernet is somewhat controversial, but to me, it’s one that should be considered in the mainstream of the region as the microclimate can easily produces it. However, I understand you may not like it.This is an excellent representation of that style.

A beautiful accompaniment to the World Cup Rugby final between the All Blacks and Springboks!. SA because the undisputed champions of global rugby with a 4th win! Stunning - now back to wine.

This is still doing very well. The overt blackberry and red fruit nose is gone and the body is also still fruity but no longer over the top. (I like both versions though) It is still full bodied and if you are into powerhouse fruity cabs (like me at times) I might guess this has 2 or 3 more years max left at this level. Still a great wine with cheese and crackers (biscuits in the US)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
