 Tasted by mckillop on 12/30/2023 flawed bottle: This bottle was slightly cork tainted. It was enough of a background note that made it hard to evaluate. Hope my second bottle is clean. (660 views)
 Tasted by AGELVIS on 7/1/2023 & rated 95 points: One hour decant. Deep dark purplish magenta color. Blackberry, chocolate, and Chinese five spice. Dry, satiny, chalky palate. Firm, full tannins on the longish finish.

This was much better than I’m making it sound. It really would benefit from a 3-4 hour decant. Great ending wine to a fun wine weekend in Deer Valley. Decanting Queen supplied this beauty, which was tied for WOTN. (1910 views)
 Tasted by Decanting Queen on 7/1/2023 & rated 95 points: Deer Valley Palooza in 3 stages with Mark1npt and Agelvis; 6/25/2023-7/1/2023 (8,100 ft): I specifically bought this bottle for this occasion and it didn’t disappoint. Floral perfumed nose, black raspberry (is that a real thing?) fruit, a big spicy personality. We only gave it a 1 hr decant but I thought would show better with a few more hours. I have 2 more to age in the cellar for another year or two. (2232 views)

The nose is perfumed milky and strong, big body, high in acidity and tannins, very dark notes, cocoa and expresso, very long finish… the wine got better towards the end of the night.

Drink or hold but the best days are yet to come…

The Elevation 1147 is their flagship wine.

2106 Elevation is a big step up from all their other reds. The mouthfeel is thick, round, gorgeous. Ripe, lush fruits of; blackberries, black raspberries, black plum, dark cherries & an array of purple fruits. Tobacco, leather, saddle-wood, light graphite, crushed rock powered, limestone alluvials, beautiful baking spices that need some time to tame, cinnamon, nutmeg, clove, vanilla, dark chocolate, mocha, caramel, dry twig, dark rich soil, touch of moist clay, dry top soils, understated sweet tar & black licorice with fresh & withering; dark, red, blue flowers with lavender & violets that follow as it sets. The acidity is round & excellent. The finish is; ruby, lush, round, well balanced & knitted & persistently gorgeous wire to wire.

While many will find it hard to resist now, you would be doing your substantial invest & this 2016 a disservice by opening before 10 years in bottle.

This is a 95 now but, I see it as a 95-98 down the road. (2460 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

[from their website] The David Arthur Vineyards Elevation 1147 is their premiere wine made entirely of Cabernet Sauvignon grown in their vineyard block planted at an elevation of 1,147 feet. “This particular block consistently produces great fruit, so we decided to bottle it separately,” said David. “The wines are very friendly right from the beginning,” added Gretchen. “Our Cabernet is smooth, sexy and supple with backbone and structure to age.”

Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
