 Tasted by Paul852 on 5/15/2024 & rated 90 points: This is the July 2021 disgorgement; as usual apparently 90/10 PN/C, 10 months in oak, no malo; the producer website suggests 8g/l. And I guess 2019 base with reserves from 2017/18.

Initially this was rather closed down; little on the nose and a rather austere palate (extremely so for 8g/l). It opens up somewhat with 30+ minutes of air - raspberry and redcurrant on the nose; the palate is very crisp, minerality emerges, and it is well-balanced. The finish is quite long and clean. However, I have an overall perception of a slightly "thin" wine, particularly for the dosage.

This is my first Vilmart bottle and perhaps I came in with over-inflated expectations, or maybe as some have suggested it just needs more time in bottle. Anyway, still a very nice wine indeed and OK, if not great QPR at the ~US$51 that I paid. (397 views)

If I had one word to explain this it would be juicy. That character of the fruit is just that, fresh and vibrant raspberry, strawberry, pear and lime. Some autolytic notes, hints of minerality along with an herbal character that I enjoy.

As it opens up the mineral note turns into a side show of chalk on the palate. Good balance of acid and body. Nice finish, wishing I had more of this wine. I also love the color of this. Rosé champagne is just fun. (1855 views)

 Tasted by Frank Murray III on 2/4/2024: Vilmart--Emotion and Coeur de Cuvee (select vintages), the meal anchored by Astrid (My House In The South OC): October 2020 disgorgement, Cherry, strawberry with a nice lick of minerality in a zesty package....fortunately I have the leftover bottle from last night, with plenty of wine (and C02) for retaste today. Salmon/pink in color. This is a very good iteration of Rubis. It has the density of a riper year, yet the acidity is plentiful, allowing both parts to work together. For me, more in the unctuous side of things, with a cool blood orange coil running through it, alongside a vein of strawberry. Stylistically, this works really well, so long as you're Ok with a richer, fuller expression of Rose. (2362 views)

The nose is strawberries and cream with a hint of floral. Although the palate initially was creamy, citrus notes quickly dominated. Appearance is clear, pale intensity, reddish pink colour. Thin legs. Fading bubbles.
Nose medium+ intensity, with aromas of gold + red apples, kumquats, slight oxidativeness. Developed.
On the palate, dry, rounded high acidity, medium- alcohol (12.5%), medium+ body. Medium+ flavour intensity, with flavours of rounded oxidative nut, kumquat, vinous red and gold apples, wet stony minerality. Long minerally finish.
Very good quality. Well aged and drinking in a good place already.

France - When it comes to wine, France stands alone. No other country can beat it in terms of consistent quality and diversity. And while many of its Region, Bordeaux, Burgundy and Champagne most obviously, produce wine as rare, as sought-after and nearly as expensive as gold, there are just as many obscurities and values to be had from little known appellations throughout the country. To learn everything there is to know about French wine would take a lifetime. To understand and appreciate French wine, one only has to begin tasting them. Sub-Region:

Champagne - The French region of Champagne (including the cities of Rheims, Épernay, and Aÿ) was the first region in the world to make sparkling wine in any quantity. Today, the name of the region is synonymous with the finest of all sparkling wines, and wine-making traditions of Champagne have become role models for sparkling wine producers, worldwide. Surprisingly, the region of Champagne is now responsible for only one bottle in 12 of all sparkling wine produced. Styles of champagne range in sweetness ranging from an extra brut or brut 0, to the basic brut to demi sec to doux; some houses produce single vintage champagnes and others produce non-vintage (or incorporate wines/grapes of multiple vintages), often to preserve a specific taste; combinations of grape varietals; and colors, including a rosé. There are several sub-appellations, including the Valley of the Marnes river running from Épernay west, Massif de Saint-Thierry north and west of Rheims, Valley of the Ardre, the Mountains of Rheims (between Rheims and Épernay), Côte des Blancs, Côte de Sézanne, and Côte des Bar in the South. Champagne wine only uses three grape varietals (cépages): Chardonnay, Pinot Noir, and Pinot Meunier.
