Apple, pear, lime, kiwi. Elegant fine bead. Flows through the palate from start to long finish. What it lacks in bread and yeast is made up with structure, fruit and balance. Blew an Eric Rodez Cuvee des Grand Vintages off the table that cost about 50% more, but admittedly had less development in bottle. Quite remarkable how this vintage has evolved. Evolved positively over several days, eventually turning more tropical in expression; I preferred the day 1 and 3 expressions. Attractive nose with some evidence of oak use, the palate had a good balance between the ripe, tropical fruit, and the high acidity and precision. Reminded me stylistically of Collin because of the beautiful delineation of ripe fruit but someone at the table said it was more similar to Bouchard - just goes to show the heights that this was able to reach. Wow, the nose from this had white flowers, lily. Rounded on the palate, tasting like white wine but plenty of weight ending with a grapefruit finish. Bottled low pressure, some estimate 2-3 bars instead of the 6 bars. Finish was a little short. Did not guess it was not a champagne but something feels a little different. First time trying Ultramarine, I now understand the hype but with current prices, not sure I would buy them. This was another oddly showing bottle of this release - a bit flat, with some moderately oxidized flavors, also a note of geosmin that got me paranoid about TCA. I eventually gave up trying to coax more pleasure from the glass and decided to hope for the best on day 2. Most of the bottle left the next day, and it's killer. Just beautiful, with tons of barely-ripe lemon fruit, very gentle sweetness, stony minerality, and delightful subtle pastry richness. For my sweet spot these need another couple of years, but it should be open season after that. Vibrancy and effervescence were on-point, as were the balanced and ever-expanding execution of flavor. This is missing some minerality and snap to frame-out the fruit, but scaffolding aside, this is a pleasure-hound sparkler to be sure. Drinking well now and likely at the height of its freshness meter (for me at least) before it starts to dip into a more secondary and tertiary flavor profile. 93 points.
