This struck a cord for me tonight, I was captivated by how creamy this was on the palate, nice crisp fruits; pear, green apple, and stone, apple skin, almond paste, very expressive with limestone minerality.  Tasted by Wine Canuck on 1/21/2023 & rated 92 points: 1970 Themed Bordeaux Dinner: This pours medium straw in the glass. The nose is of biscuit, mint, lemon curd, crushed rock and a touch of auotlytic pastry. The palate enters on rich vanilla wafer with dosage that feels like 7 g/l (spec sheet afterwards reveals 5 g/l) with acid that I wish was just a little higher, perhaps only medium to medium plus. The finish is moderate in length showing biscuit and lemon curd. All in a all this is a very nice and enjoyable Champagne from Bruno Paillard, though I don't think I'm as hot on it as some of the critics and I don't find this to be a terribly strong value at $90 CAD. Bruno Paillard has long been one of my favorite producers and it has done nothing but climb that rather short list. While I mostly pop the Première Cuvée, this Grand Cru Blanc de Blancs for about twenty bucks more, is certainly worth the extra cash. Quite pale in the glass with just a touch of straw, it is loaded with considerable tree fruit (white peach) but also plenty of citrus (lime zest and pink grapefruit). Aromas of white flower a healthy brioche quality, and a touch of nuttiness. The palate is rich and creamy with considerable minerality. It is also on the dry side of champagne (only 5 g/l), which really helps to highlight the fruit and mineral aspects of this gorgeous wine. Outstanding.

 Tasted by ploher on 7/22/2022: Dg. in 21. Beautiful nose with a strong emphasis on yellow apples and fresh, ripe pear. The palate is generous with a soft texture and mousse. Almost tender, this is a lovely feminine, delicate expression of Chardonnay with the naturally high acidity of CH in check with fruit and minerality. Outstanding claritiy. Tasting this at the domain along the other cuvees, this was the standout wine for me. Have to get some for my cellar. 17.5/20 (795 views)

The palate is racy and crisp but shows a lovely depth of texture as well. Lemons, yellow apples and orange peel mix so well with chalky, salty, briny tones, and these deeper tones of bread dough and shaved ginger. Precise, beautiful stuff – there’s a lot of clarity and depth here. From the Cote des Blancs aged four years sur lie, 5 g/l dosage. (986 views)

Interesting to try a demi-mousse champagne, although I expected something different when I bought this wine. Almost six years after disgorgement it retains a very high acidity, but for me the biggest issue was the bitter finish, exactly like drinking grapefruit juice. Doesn't seem like an immediate wine; probably needs many years of bottle rest. On the nose, tremendous amounts of chalk (almost overwhelming) with a certain salinity, citrus fruits (lemon, lime, grapefruit), overly toasted bread, a slight yeastiness and some gunpowder. On the palate, much of the same; predominantly citric and mineral, but the bitterness on the finish is excessive. It's more of a refreshing champagne than a complex one; not very stimulating, it needs time.

Pretty, clean and crisp on the palate with salty minerals and high acidity, but some nice depth and texture throughout. Lemon, crunchy apricot and green apples mixed with honey, chalk, mountain streams and minerals. Dry, crunchy, vibrant. Aged four years on the lees, with a 5 g/l dosage. Disgorged October 2016. A touch of toast perhaps. Maybe my palate is going through a dumb phase, the last few champagnes I've had have not shone. This is fine, but doesn't taste like grand cru quality. My first Bruno Paillard, hopefully the next will be better.* Disgorged Sept 2015. [Bottle wrapped in brown 'anti-UV' cellophane; cork + cage; 12% abv; The Bon Vivant's Companion, Edinburgh, £45].

France - When it comes to wine, France stands alone. No other country can beat it in terms of consistent quality and diversity. And while many of its Region, Bordeaux, Burgundy and Champagne most obviously, produce wine as rare, as sought-after and nearly as expensive as gold, there are just as many obscurities and values to be had from little known appellations throughout the country. To learn everything there is to know about French wine would take a lifetime. To understand and appreciate French wine, one only has to begin tasting them. Sub-Region:

Champagne - The French region of Champagne (including the cities of Rheims, Épernay, and Aÿ) was the first region in the world to make sparkling wine in any quantity. Today, the name of the region is synonymous with the finest of all sparkling wines, and wine-making traditions of Champagne have become role models for sparkling wine producers, worldwide. Surprisingly, the region of Champagne is now responsible for only one bottle in 12 of all sparkling wine produced. Styles of champagne range in sweetness ranging from an extra brut or brut 0, to the basic brut to demi sec to doux; some houses produce single vintage champagnes and others produce non-vintage (or incorporate wines/grapes of multiple vintages), often to preserve a specific taste; combinations of grape varietals; and colors, including a rosé. There are several sub-appellations, including the Valley of the Marnes river running from Épernay west, Massif de Saint-Thierry north and west of Rheims, Valley of the Ardre, the Mountains of Rheims (between Rheims and Épernay), Côte des Blancs, Côte de Sézanne, and Côte des Bar in the South. Champagne wine only uses three grape varietals (cépages): Chardonnay, Pinot Noir, and Pinot Meunier.
