 Tasted by mflesh on 8/21/2012 & rated 85 points: Enjoyed at Debbie and Brad's. This was a boring wine. I was the one that liked it the least. Thank goodness everyone else REALLY liked it because I seemed like a hero. Everyone else would have rated it a 92. Can't understand why. This wine was uncorked intact, zero bleed, medium stain on the cork. Nothing out the bottle initially. Passed through a vinturi into a decanter. Swirled for a while. Poured into glass - deep red. Nose out of the glass was mixed dark berry fruit. QUITE prominent. Entry was sweet blackberry pie, then the generic-ness of this wine came out. In the mid-palate, that indecipherable taste came up. Cherry, currant, raspberry, (enter your fruit here) was all there. This wine tried too hard, and ended up looking like the velvet Elvis at the costume party. Finished with medium tannicity. Medium to full bodied offering. Nice, but thank goodness the one bottle was all I had. Won't be revisiting this one anytime soon. There are 100's of bottles of wine that taste just like this one. Paid $36/bottle, and let me tell you there are hundreds, likely thousands, of wines that would put this one to shame in the same category. (5079 views)

Nose: plum, pencil shavings, cherry cola, green bell pepper. Palate: black pepper (some heat), currant, black raspberry.

 Tasted by pete s. on 3/15/2011 & rated 89 points: Pop and pour. Lots of alcohol on the nose that masks subtle red fruit and spice notes. The heat is also present on the palate. Disappointing. It does open up some over the next hour. I then proceed to slice off the tip of my finger while prepping dinner - 3/4 of the bottle is left and corked.

Day 2 - Finger is bandaged and I'm ready to finish the meal I started. I pour a glass to see if the extra day helped the wine...and it did. Pure black cherries and raspberries with oaky spice on the nose. Medium bodied, rich but fresh fruit and cedar on the palate with substantial structure that gives nice balance. Still a bit of heat on the finish, but this is a completely different wine today. I would hold for 2-3 years or decant. (3203 views)

The palate is very bland with firm tannins.

taste: smooth medium feel with a real good red fruit base with balanced tones of red cherries, berries, and red fruits. Good definition on the fruit with nice tannins

overall: a real good cab. It could use some more depth on both the nose and palate, but this is a quality cab that brings some real nice aromas and flavors (4734 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
