Tasted by pbenn001 on 2/14/2024 & rated 93 points: Decanted for about an hour before serving - this wine still has about 2-3 years left in it for my palate as there is a slight bit of old gym socks on the nose, but the fruit is still there. Maybe not as it once was, but it is still a very enjoyable wine that we paired with lamb chops on Valentine's Day! There are still dark fruit notes as well as some blackberry on the nose. An overall pleasurable wine with a little bit of life left, but make sure to drink up soon! (217 views)
Tasted by Healdsburg82 on 4/21/2023 & rated 93 points: On the nose there is an abundance of dried fruit and alcohol. However, the alcohol is not off putting. The palate is where the magic is. Acid, tannin, and secondary fruit flavors all in harmony. Rounded and soft with complete integration. The finish is long and satisfying.

While this bottle may be past it’s prime, it was able to demonstrate the impeccable quality of the fruit and winemaker. (571 views)
Tasted by tpbrown5 on 3/13/2021 & rated 94 points: This is a delicious St. Helena cab, a wonderfully balanced wine—still bright after two plus decades. (1788 views)
Tasted by klezman on 12/31/2018: A bit closed down after an initial burst of flower and fruit. Mint took over for a while, and then cherries, currant, and some other herbs and spices came out. Surprisingly youthful at the age of 18. Very nice. (3727 views)
Tasted by HitAnyKey on 4/16/2016 & rated 92 points: Fully integrated and well-balanced. Earthy notes are prominent, blackberry, and other herbal tones. Very light tannins. Perfect pairing for our grilled porterhouse. (6060 views)
Tasted by GFischmann on 11/22/2015 & rated 92 points: Great wine (6210 views)
Tasted by Julius. on 6/19/2015: Considering the fact that the "professionals" said the vintage was OK at best and at this point most of the wines were in decline (and some undrinkable), this one is a gem.

Its appearance is indicative of its age - a relatively dull garnet with very narrow rim. The nose is strong, with black fruit, plum, leather, earth and vanilla. On the palate, that black fruit comes across vibrantly, saying "I'm not so old" and is complimented by those same secondary and tertiary notes that were on the nose - leather, tobacco and vanilla. Fine grained tannins, medium(-) acidity, medium body round out the wine. Everything is in harmony. While I think there are still several years left in this wine, I don't see it getting any better. I am really digging this wine. Outstanding. (6591 views)
Tasted by HitAnyKey on 3/26/2015 & rated 93 points: This wine is drinking wonderfully. Cathy's wines easily go strong for a couple decades. (5694 views)
Tasted by Inamorata on 1/16/2015 & rated 92 points: Decanted and let stand for an hour. Drank this as part of a flight of St. Helena Cabs; also a 2012 Conn Creek Cab and a 2003 Peacock Family Spring Mountain Cab. Paired with marinated and roasted flank steak, sliced thin with au jus and tomato marinade, rice, whole kernel corn, and broccoli. Still dark and inky. Nice legs. Beautiful bouquet. Cherries, licorice, vanilla. First taste brought lots of fruit. Tannins have settled out and this is a wonderfully smooth wine. Very well balanced. I like the lower ABR. Notes of plum, cassis, blackberry. Vanilla and tobacco at the back end. Finishing off with a lingering hint of spices, pepper, and leather. Cathy has certainly developed a talent for developing these bench wines. Although this one is drinking beautifully, it seems to have some more life left to shelve it. I don't know if it will do any good but I think I will keep my last bottle for another year or two.

My rating is for what it is now; not what it could be. (5430 views)
Tasted by jimyeni on 10/26/2014 & rated 91 points: Based on our preferences I'd say to drink now, still a beautiful nose with beautiful blackberry and cherry fruit, oak spices however on the palette despite the nice acidity it was a little lacking in the mid palette. Still a great wine, just in the other side. (3224 views)
Tasted by MLR on 9/14/2014 & rated 90 points: Smooth withy good fruit. Could go a few more years. (2854 views)
Tasted by MLR on 8/26/2014 & rated 89 points: Nice wine, good fruit and soft tannins. Can go a few more years, but don't wait - drink it now. (2612 views)
Tasted by Tudz Drkl on 8/16/2014 & rated 92 points: Still fresh; you'd never guess a 2000. The fruit is dark red at the front leading toward purple at the back. The tannins are soft and the acidity just right. Spicy, cedar and pine notes mix with some early signs of leather to make a great bottle. (2530 views)
Tasted by iByron on 2/20/2014 & rated 91 points: Dark, glass-clinging ruby purple trending toward garnet. Dark red fruits and marzipan on the nose. Subdued red fruits, marzipan, and soft cedar on the palate. Firm, fuzzy tannins with medium long finish with some stewed plum and graphite at the end. Not a big fruit bomb here. Closer to what one might expect from the Old World...or from old Napa. Drink now or hold until 2020. (3377 views)
Tasted by soyhead on 10/6/2013 & rated 92 points: tasted from magnum
mature, impressive, red fruit punchy mature type flavors (3427 views)
Tasted by HitAnyKey on 8/18/2013 & rated 91 points: Delicious, yummy, awesome as usual. Was great from first opening of the bottle to still going strong with good balance and firm tannins hours later. Fruit has mellowed, but it's still there with a mocha component that is quite lovely. (3289 views)
Tasted by PolarBear22 on 11/10/2012 & rated 90 points: Decanted for about 1.5 hours. Initial tastes of fruit faded by dinner. (recommend shorter decant) Cedar pencil shavings on nose and graphite on palate. Smooth tannins. Wonderful deep purple color. Great Cabernet that has aged very well. (4573 views)
Tasted by StarM on 11/5/2012 & rated 90 points: Typical Corison subtle aging Cab -- still some fruit, but nice leather & licorice. (4284 views)
Tasted by Soleman on 4/19/2012 & rated 92 points: wonderful, elegant, balanced yet complex. (4340 views)
Tasted by hld1970 on 2/5/2012 & rated 93 points: Outstanding. Served at our wine party and it was the hit of the night. (4574 views)
Tasted by iamandyc on 2/1/2012 & rated 89 points: Day One impression in a PNP. A little "flat" and closed compared to what I remembered and expected. Let's see what day #2 holds. (4299 views)
Tasted by Steve Jones on 12/25/2011 & rated 92 points: Beautiful, supple and elegant. Hints of menthol and eucalyptus. It sneaks up on you and tells you how good it is. I likened it to a bordeaux style, unusual for the source. Very nicely done. (4030 views)
Tasted by jfeingold on 10/1/2011 & rated 91 points: Nose of cherry and cedar. First taste of red fruit. Wine is ready to be drank right out of the bottle. (4336 views)
Tasted by foobarski on 9/13/2011 flawed bottle: Cork was like Play-Doh, and the wine was undrinkably mildew-y. (4218 views)
Tasted by foobarski on 6/13/2011 & rated 90 points: Quite good as a pop 'n' pour, but based on others' reviews I will be sure to decant my last bottle beforehand. I'm also getting the pine on the nose and graphite on the palate, and the rich, mouth-coating feel. (4942 views)

2000 Corison Cabernet Sauvignon

2000 Corison Cabernet Sauvignon: Delicious and approachable already. Supple and harmonious, with a sense of understatement. Spicy currant, black cherry and plummy notes, that are well-balanced and rich. Fine-grained tannins make it easy to enjoy now. Drink now through 2010. (tasting note summer 2004)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

USA

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.

2021 vintage: "Unlike almost all other areas of the state, the Russian River Valley had higher than normal crops in 2021, which has made for a wine of greater generosity and fruit forwardness than some of its stablemates." - Morgan Twain-Peterson
