Appellation: Napa Valley
Varietal Blend: 100% Syrah
Soil: Volcanic soils, strong gravel outcroppings with 20% serpentine rock and shale deposits.
Elevation: 1400 feet.
Harvest: Manually harvested. Picked at optimum ripeness and hand sorted in small bins.
Aging: Aged for 18 months in barrels of which 50% were new. 100% French oak Bottled May 25th 2010.
Production: 1127 Cases
Wine Maker: Bill Parker
Alcohol: 14.2%
Technique: The fruit was destemmed and gently crushed into stainless steel fermentation tanks. Inoculated with Pasteur Red yeast, the fermentations were completed in about 8 days. During this time the wine was pumped over twice daily to facilitate extraction of color and tannin. The wine was then held on the skins for an additional 12 days to complete malolactic fermentation and soften some of the harsher tannins. The wine was gently pressed using a membrane tank press, and then racked off the gross lees into barrels. These barrels were then racked quarterly to allow for natural clarification.
