Swordfish and scallops come racing to mind, but any white fleshed fish or shellfish should pair wonderfully. Or just upscale your fried chicken. It’s good for that, too. Drink now through 2024. It's not quite not so harmonious or intense to warrant $30 IMO- felt similar to say, Dog Point (N.Z. Sauv Blanc), which costs $10 less and shows far more intensity and even elegance. Flavorful and crisp with a solid sense of the fruit and lemongrass flavors. Nice minerality and a touch of spice.

Relying on naturally-occurring yeasts, we fermented a portion of the grapes in 900-gallon French oak casks, called foudres, with the remainder in oak barrels. We then aged the wine for six months on its lees (the spent yeast) in neutral barrels. On the nose, the wine displays fresh, tropical notes of pineapple, kiwi, and peach followed by melon, lime and fresh apple on the palate.
