Palate still youthful and red fruited. Moderate tannins, perfect balance and good length. Served over 2 hours with Italian food (SF restaurant). Mid weight balanced tuna tartare but structure stood up to caccio e pepe and pork chops. In a great place now but with plenty in reserve to please for many years. Notes of dried flowers, some dried fruits, menthol, some mint, also some dark fruit, some tar, graphite and tobacco. It‘s medium-full bodied, with still medium-high acidity and medium+ tannin that is still present and a touch drying. Good length. A nicely aged Pajè and this will still provide a lot of joy over the next 10 years or so. I like the freshness here. (1997 views) | | Tasted by HowardNZ on 6/28/2020: The 2004 Produttori Riservas: Asili wins by a nose (Magnum Society, Wellington, New Zealand): Served single blind. Picked as clearly the Pajè. A lighter ruby colour with a little garnet. A bouquet of tilled earth, red cherry and preserved red fruit, with a touch of tar and meaty and pretty, floral components. Also, some Marmite, showing signs of development and oxidation. In the mouth, charming and lighter bodied than the other wines. Some tasters had the Pajè as lacking depth and weight. Savoury, earthy and meaty. Also some dark chocolate and Marmite. Attractive, vibrant acidity, I really liked. Judged on palate, the most evolved wine in the lineup. The tannins well integrated and softened, although some found them a little drying on the relatively short finish. Overall, an attractive, enjoyable entry level wine, there for drinking soon. Aroma: licorice, tar, tobacco, moist forest floor, Full-bodied- with very good acid and firm and gripping tannins. Nice fruit concentration. Excellent length with a hint of sweetness in the finish.

Definitely ready, fairly youthful at twelve years, will keep and develop for several years more. Just watch the serving temperature to keep a refreshing balance. It's medium-full bodied with pretty good mid-palate density, mouth-watering medium-high acidity and still medium-high tannin that is very silky. Good length. A very beautiful Pajè that is still at the beginning of the drinking window but starting to open up aromatically. Despite the power it is super fresh and refined. Straight from the bottle: what an aroma - a veritable fruit bomb, very intense, concentrated and deep fruit - red berries, sweet cherries, "cocktail berries", flowers, a hint of tobacco and wood - elegant and fresh. Fades of a bit after some time in the glass. Palate: Fresh, slim cherry fruit, really tough tannins that covers some of the fruit, but after swallowing the fruit re-emerges and lasts for a long time. After an hour or so in the decanter, the wine was put back in the bottle, corked and put in the fridge. Day two: has changed a lot. The same kind of fruit, stronger again now, but with better "resolution" - roses, rose berries and cherries that seem lighter than last night. Still more emphasis on freshness and elegance. Lovely mouth feel, cherries, some spice, tannins have been rounded off a bit and are not so dominating. Fresh. A long, fruity finish that is just lovely. Not very full bodied, but juicy, elegant and aromatic. | Produttori del BarbarescoO ok justNebbioloNebbiolo is a red grape indigenous to the Piedmont region of Italy in the Northwest. The grape can also be found in other parts of the world, though they are not as respected.
Nebbiolo is often considered the "king of red wines," as it is the grape of the famed wines of Barolo DOCG, Barbaresco DOCG, and Roero DOCG. It is known for high tannins and acidity, but with a distinct finesse. When grown on clay, Nebbiolo can be very powerful, tannic, and require long aging periods to reach its full potential. When grown on sand, the grape exhibits a more approachable body with more elegant fruit and less tannins, but still has high aging potential.
"Nebbiolo" is named for the Italian word, "nebbia", which means "fog", in Italian and rightfully so since there is generally a lot of fog in the foothills of Piedmont during harvest.
Nebbiolo is a late-ripening variety that does best in a continental climate that boasts moderate summers and long autumns. In Piedmont, Nebbiolo is normally harvested in October.
