 Tasted by thunderfly on 1/18/2022 & rated 90 points: Decanted and drank about an hour later. Very good still, although I’m sure much more mellow than had been drank a number of years prior. Lots of earthiness with dark berry backbone. (1012 views)
 Tasted by ArizonaWineGuy on 5/25/2019 & rated 91 points: Some seepage evident when I cut the capsule, but the cork came out intact. Purple, not deep, but not pale, color. Nose filled with dark cherry and black plum. Fruit bursts forward on the attack, with the stone fruit carrying through, accompanied by an explosion of perfectly ripe blackberries. The tannins take a moment to kick in, but when they do they are firm and structured. Fruit fades through the lingering finish, but the velvety mouthfeel remains persistent. Probably a bit past its peak, but drinking nicely. Don’t bother holding on to this much longer (2051 views)

Purple black ripe fruit, sweet oak, creme de cassis, licorice, full bodied with good extraction as I have stated in previous notes. Delicious. (3693 views)

It's rich, sweet, deep, with a hint of bacon and the "Napa thing". Simply outstanding. Two hours open the tannins begin to assert, but alas, there's none left to see what's on the other side of that evolution. We've had more expensive bottles but few better. Bonnie watches the pours like a hawk. :) (1408 views)

 Tasted by ArizonaWineGuy on 7/21/2015 & rated 92 points: Very deep, dark red color, almost inky, but starting to show a slight hint of age. Incredibly huge nose, with great depth, filled with ripe berries, cherries, and a bit of eucalyptus. Chewy in the mouth, with firm but not overpowering tannins. Cherries are dominant, with hints of chocolate and maple lingering. A great big Stags Leap Cabernet, with at least ten good years of life ahead of it. Some will say it is too big a California style, but I don't care, I really like it. (2078 views)

I can't wait to try the 2012 vintage, when it becomes available, not to mention 2013 the vintage. 2011 a tough year, not bad but not great. 2010 is off the hook good!!!

I don't know how long Baldacci will fly under the radar, but take advantage of it while you can, this is excellent wine. (1914 views)

 Tasted by Tim and Bonnie on 6/27/2014 & rated 95 points: Looks like Bon and I will be the outliers on this one, but to us it is outstanding. Dark, practically opaque purple with garnet tints at the edges. It is smooth as chocolate milk and definitely has the "Napa thing" we more often than not note is missing in most of the cabs we drink. It's not tannic at all on the pop.

Interesting to note that we poured 1/3 glasses each before dinner and let the balance rest in a sealed carafe for an hour and a half, and during that time it was absolutely consistent. Then, with dinner, after an additional 15 mins in glass, it finally began to transform. The tannins began to assert and a slight bacon flavor emerged.

Update 4/6/15: If your bottle has a good amount of lees you will most likely have a very captivating experience. If not you will still have a great wine but it may not be the nectar we rated 95. Have enjoyed about a case to date and this observation holds generally true. Without the lees it's a 91-92. (1767 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
