 Tasted by sean7711 on 5/6/2023 & rated 98 points: Opened at Trisha’s BYOB in Cape May for my wife’s birthday. Paired well with the filet and a seafood linguine. Beautiful blackberry fruit, smooth tannins. Great bottle of wine. (1228 views)
 Tasted by csimm on 7/27/2021 & rated 96 points: Vice Versa weekend and dinner: Displaying an exceptionally young and tight demeanor, the 2015s in general seem to require even more time in bottle before coming to full fruition. Double-decanted for over 8 hours, the To Kalon BBS shows the hallmarks of the site in a compacted and exquisitely framed-out package. Primary and bitter on the back end, up and until open air in the glass for an hour or so really gives it permission to stretch its legs, this is a serious To Kalon that is decidedly chiseled. It is a fantastic food wine. (6754 views)
 Tasted by Cristal2000 on 7/24/2021 & rated 97 points: Vice Versa Wine Dinner: As expected with these super concentrated BBS wines, this still wasn’t completely ready, but it showed better than the Crane we had alongside and had all the elements of a tremendous future. With depth for days, wonderful structure, enough flavor to last decades and an off the charts finish, expect this to improve for at least another decade. The overall class of this vineyard shined. Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon
