 Tasted by penywyse on 10/25/2021 & rated 89 points: Popped and tasted, initially straw, grass, earthiness, light color, and effervescence. As the effervescence fades, it is more citrus. It is very light on the tongue and the finish is not really very long, but remains consistent with citrus and straw. I really enjoy this style and the natural not overdone structure this wine offers. It was beautiful tonight with a light angel hair pasta, chicken and vegetables.

Update:
So, I saved half a bottle of this for the the 2nd night. Some of the crispness has definitely gone, but it is still drinking very well and I may enjoy it more now. The citrus aspect has reduced, but the grassiness and earthiness of this wine remains and I like it a lot. There is no bitterness in the finish. It lingers initially with a touch of lemon/lime but it is the straw/grass and what seems like the sense of a powdered clay that hangs on for a nice duration. I would have to increase my rating to a 90 on this transformation. Cheers. (1156 views)

The palate starts mildly mineralic, becoming sharply acidic at midpalate. This finishes with a balance between subtle minerality and a slick, buttery smoothness, with a lingering aftertaste of Kimmeridgian limestone. Punches way above its weight at the <$20 I was able to find a bottle for. This may have displaced Fevre's "Champs Royaux" as my go-to entry-level Chablis. (2008 views)

A correct Chablis, not as linear as I prefer, this one was a bit rounded with notes of pear, green apple and tangerine.
Missing out on some chalk and minerality that I long for, but this went nicely with crab legs and their delicious crabcake.

Pale gold color.
Medium intensity aromatics - white mushroom and ripe lemon. green apple.
Dry, medium body, 13% alcohol (actually 12.5% - seems higher), high acid, no bitterness. Really fills out in the midpalate. Quite dense and mineral - like Meyer lemon oil. Neutral overall but with mineral-citrus length. Shows some parmesan-rind lees on the midpalate. Slight oak - toast. Slight honey - possibly botrytis? Slight oxidation from oak aging.

Very nice example of a riper Chablis with high acid. (2152 views)

Joseph Drouhin / Drouhin-Vaudon Chablis

VINEYARD
Site: This wine comes from grapes exclusively harvested on the Drouhin Family Properties. These vineyards are mainly situated in the Valley of Vauvillien, not far from the Grand Crus, between the Premier Crus of Montée de Tonnerre and Mont de Milieu.
History & tradition: in the sixties, when the Chablis vineyards were all but abandoned, Robert Drouhin recognized the potential of this region which had been ravaged by the phylloxera disease a century before. He was one of the first Burgundy propriétaires who set about revitalizing the area.
Soil: the Kimmeridgian limestone contains millions of tiny marine fossils embedded in a kind of whitish mortar which may have been once the bottom of the sea...hundreds of million years ago. This marine origin gives the wines of Chablis their unique flavor.
Drouhin estate: 27.3 ha. (68.25 acres).
Average age of the vines: 24 years.
VITICULTURE
Biological cultivation since 1990 and biodynamic cultivation since 1999.
Soil maintenance: age-old methods. Ploughing: "buttage" (hilling up around the vine-stocks) in autumn; "débuttage" (ploughing back in spring); work between the rows and the vine stocks done with manual tools only.
Treatment: only authorized products for biological cultivation are used - infusions and macerations of plant materials, sulfur and copper, powdered rock. Natural predators are not eliminated.
Plantation density: 8,000 to 10,000 stocks/ha.
Pruning: double Guyot "Vallée de la Marne" (for its resistance to frost).
Yield: we aim for a lower yield, such as it existed before the new law. This yield is therefore the present maximum yield minus 20%.
Average yield at the Domaine: 55.13hl/ha (the yield currently authorized for the appellation is now 60hl/ha).
VINIFICATION
Harvesting: by hand.
Pressing: very slow so as to respect the fruit. Juices from the last pressings are not retained.
AGEING
Type: stainless steel tank Length: 7-8 months.
Throughout the ageing process, decisions are taken only after careful tasting evaluation. The data obtained is completed through technical analysis. As with every other Joseph Drouhin wine, absolute priority is given to the true expression of terroir and character of the vintage.

Burgundy - The province of eastern France, famous for its red wines produced from Pinot Noir and its whites produced from Chardonnay. (Small of amounts of Gamay and Aligoté are still grown, although these have to be labeled differently.) The most famous part of the region is known as the Cote d'Or (the Golden Slope). It is divided into the Cote de Beaune, south of the town of Beaune (famous principally for its whites), and the Cote de Nuits, North of Beaune (home of the most famous reds). The stone, citrus and limestone amalgam is exactly what we search for in Chablis as the style harkens to a day in the Cote de Beaune proper (1960's - 1980's) when wine was not meant to be consumed the week it was released, battonage was not used by all and new oak was rarely seen ... the texture is natural and 'of the vintage' not 'of the winemaker' .... Like Sancerre or the Loire in general, 2014 in Chablis is one of those rare years with extract and transparency. It appears to be a vintage for the "neoclassic" ages and those of us intent on cellaring the most terroir-driven (but still powerful) examples of vineyard, site-place and varietal will want to invest (heavily) in the magnetic and electric 2014's." - Jon Rimmerman
