 Tasted by wine4ever on 11/27/2018 & rated 93 points: Fantastic. We usually don't have Cabs from Italy very often, but when we do, we are usually pleasantly surprised. I really like the structure of this one in particular. Medium weight but heavy on flavor. Tannins are mostly resolved, great fruit flavor which is kept in balance with mineral and a touch of oak. Clear, maroon color, nose a bit reserved but long finish. Drinking great now and should for next 3-5 years - at least. (1257 views)
 Tasted by Loren Sonkin on 2/6/2016 & rated 93 points: Great showing. Pop and pour seemed fine, but ti was a bit cold from the cellar. By the time it warmed, the bottle was drained. Ruby/purple in color. The nose has dark cherries, cassis, some licorice and some spice. Medium to full bodied. Complex and deep. Tight layering that unwinds in the glass. Delicious fruit but really complex. Nice acidity that worked great with dinner. Nice finish. Sadly, my last bottle. (3068 views)
 Tasted by winemaker on 7/12/2013 & rated 92 points: This is kind of a new world take on Italian/Tuscan Cabernet. Still dark purple. Clearly, this wine has had plenty of the high end treatment regarding elevage and oak exposure. The oak is fully integrated. Muted nose. Kind of chewy. Definitely has cassis as well as bell pepper. Firm tannins and zippy acidity. This wine is drinking very well now and will hold for years to come. This wine has stuffing! (3882 views)

 Tasted by winemaker on 1/25/2012 & rated 92 points: Still really dark purple. Initially the wine smelled of smoky oak, which had me a bit worried. I was afraid this was going to be some Italian fruit bomb slathered in oak. I was wrong. With about an hour of air the oak blew off/integrated. The wine tastes of cassis with some herbaceousness in a good way. Has some earthy minerality different than Bordeaux or Napa. Full bodied with a long finish. Loren got it right in his previous note.  Tasted by Loren Sonkin on 4/16/2011 & rated 92 points: A couple of Italians and a Pinot Gris (Pranzo's): Popped and poured, this needed about 5 minutes and started to take off. Ruby/purple. Great nose of cassis, leather and just a hint of smoked bell pepper. On the palate, this is still youthful but quite good. Showing a nice streak of acidity that worked well with the food. Long finish. This is still young, but no harm opening now, but needs some air as it kept improving. I saved some for Day 2. (3480 views)

Paired with both venison lasagne and pheasant breasts, done in wine sauce. Showing beautifully now, can last for several more years based on its exuberance and strength/character. (2773 views)

Le nez dégage une odeur de sous-bois, de petits fruits - framboise chaude, de terre, le tout se retrouvant au goût. L'acidité est présente ainsi qu'une astringence marquée des tanins et une pointe d'amertume. Ce 2001 peut encore demeurer en cave sans problème pour 3 ans et plus. Ceci lui permettra de bien intégrer cette masse qui fait encore la fête! (2461 views)

Tasted April 9, 2008. Opened and served immediately. Dark purple color in the glass, clear hue throughout. Nose of black currants, cinnamon, rose petals and a mix of dark fruits. Nose kept changing with time in glass. Flavors of black currants, plums, rich berries and some bitters of the finish. Bright acidity, firm tannins, full body. Drink now with some decant time or continue to hold. (4185 views)

 Tasted by bhardie on 8/11/2005 & rated 91 points: Obviously too young but had to try one. Opened and aired for three hours. Initial nose very intense cabernet fruit with black cherry, spice, graphite and pen ink. Later the nose had mellowed and lost the pen ink but gained some mild vanilla. Medium bodied, it seemed very restrained. Flavors of cherry, blackberrry, light spices and oak. Tannins were fine and fairly prevalent at the finish and really kept this in check. Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon
