The wine is starting to get that nice dried fruit taste with good fruit and smooth tannin. I was worried when I bought the case that the artificial cork wouldn't hold up but it sure seems to have. Then I notice the sediment forming on the cork and on the bottle. Then the first breath is full of really nice fruit and it drinks very well.  Tasted by skurtz on 12/4/2014 & rated 91 points: Quite a pleasure. Over the previous two evenings, I have been tasting a young Argentine Cab, which was pretty good. This '08 cab from California is definitely one notch better, for a couple of reasons. First, there is definitely a glycerin smoothness, almost satin feel for this Burgess wine, which has had a few years to mellow out in the cellar. Also, the complexity and integration, the fruit, oak, and tannin are much more melodious. Some spice. An hour after opening, some smoky notes too. Again, smooth.

Pumped down overnight. Still juicy and balanced on day 2.

I wish I had purchased more of this 08 vintage, but this is my last bottle. (3786 views)
 Tasted by skurtz on 8/9/2014 & rated 92 points: Double decanted; purple and leggy, this wine threw a surprising amount of sediment for an 08. A complex nose, actually - red fruit, alcohol, spice, and a few other aromas I find hard to describe. On the palate the oak, spice, earthiness and maybe some bell pepper complement the ripe plum, with a lingering finish of muted tannins. This seems to have improved a bit since my last note 15 months ago. At present it is nicely integrated, balanced, and showing well in its window. A well done California cab, excellent QPR. Had next to a Cameron Hughes Lot 285 (Rutherford Cab) and this wine really showed well in comparison. Had nice full body leading to a longer finish with green chewy tannins that slowly dried the tongue. This wine was very good last night but should really shine in 3-5 years (2554 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
