Medium bodied on the palate with nice acid, lots of mineral, some refreshing bitter notes and a clean, clean finish. Definitely some sponti funk in here too. Simply adorable. Sorry, we just think that sums up the place. We could say a lot more, but why ruin the simplicity of perfection? Fun, light, citrusy, slightly tart finish. There is also hints of flowers and a bit of stony minerality. Fresh, medium+ acidity with generous fruit and a medium body. Good intensity and length. Finish is quite dry, with a bit of tartness. Medium to full in the mouth with medium plus acid, a touch of sugar, balancing bitters, a lingering spiciness and a minty finish. Harmonious and balanced. Goes down easy. Some thickening on the tongue but clear, direct and pure. Very good with matsutake gohan and buri teriyaki.
