 Tasted by ZaphodB on 3/26/2024 & rated 91 points: Amber colour. Nose is rich, generous and complex, with notes of beef stock, coffee and sea spray. Mouthfeel is bone dry, rich and generous with notes of beef stock, coffee, toasted hazelnuts and with a slight saltiness. Concentrated with a long finish.

Very nice palo cortado here, concentrated, complex and elegant! (79 views)
 Tasted by caspernick on 11/22/2023 & rated 92 points: Pale amber/gold colored with high viscosity (20% ABV). The color is specatucualr btw, hard to describe. The nose has medium (+) intensity aromas of warm nuts, yeasty dough, preserved lemon, dried plum, brine, Christmas cake and dried orange peel. The palate is slightly off-dry but the acidity is high and the body is full. Dried fruit, warm nuts, yeasty notes and a citrus twist are all present. The high alcohol hits the back of my throat a touch but blows off rather quickly. The finish is medium to long and concentrates on the desiccated fruit and salty yeast notes I got on the opening. This aperitif begs for some olives, charcuterie and warmed almonds. It's delicious and gets 92 points from me. At $17 for 375ml, it gets 5 stars.

Drank it after first tasting a Fino then a Manzinilla which was a wonderful introduction into the development of different wines from the same grape. First impression was wait, is this a sweet wine. But no it has the fruit and nut characteristics of a sweet sherry but it is bone dry. Lovely dried fruit almond lemon peel with almonds and some saline. Very long finish will buy again and try other producers. (217 views)

The story of how a fino metamorphosises into a palo cortado plays out in front of you with this glass of sherry.

A hint of the fino freshness remains, a flash of fino pale yellow, yet layers of fruit peel, almond and amber have developed are they are majestic.

Drank this, initially, on its own and loved it. Then accompanied it with cured meats and cheeses and it felt so utterly right with them.

The amontillado was livelier and lighter , this a bit darker toned and earthier and more varnishy. The color is a trip. Still good but I love that amontillado. Hard to find palo cortado though. The nose is of medium(-) intensity and includes aromas of bruised apple, chamomile, nuts, marzipan, toffee, caramel and milk chocolate. There also seems to be some VA.

On the palate the wine is dry, with medium(-) acidity, high alcohol and medium(-) body. The flavour intensity is medium(+), flavours include bruised apple, nuts, almond, marzipan, toffee, and caramel. The wine tastes lightly salty, the texture is lightly oily, the finish has medium-plus length. The alcohol is very lightly warming, but on an acceptable level for a fortified wine. The wine tastes fresh.

This is an outstanding quality wine since it has very good concentration of flavours, good complexity, very good length, and a smooth, lightly oily texture.

The wine is ready to drink. With further ageing it would not gain additional complexity but lose its freshness, and the wine is hence not suitable for further ageing in bottle. (1106 views)
 Tasted by Paul S on 2/1/2021 & rated 91 points: A decently good Palo Cortado, this paired nicely with both jamon Iberico and a variety of tapas. The nose was very attractive, showing typical notes of dried fig peel and sour plums, roasted almond skins, rancio browned pears, with just a hint of honey lemon tones at the edges. The palate was full and powerful, with a rather creamy mouthful of dried fruit peel flavours, again with almond skins, more honeyed brown pears, and a little bit of spice moving into a long, creamy, almost maple syrupy finish. There was some alcohol showing up, but enough dry extract and bright acidity to keep it balanced. Dry, but full of savoury moreishness; this was yummy and went a real treat with our Catalunyan food. Brown colour, smells of almonds, and raisins, light to medium body, dry, but not in a tart way, in the mouth almonds and a little bit of raisins, in the aftertaste acidity, saltiness, almonds and a little bit of raisins, good length (30 sec), quite unimpressive and pale for a Palo Cortado PS: when we finished the bottle after two days the body was fuller and in the aftertaste there was smoke and almonds, it was better than in the beginning, yet I still wouldn’t buy it again.  Tasted by Elycohn on 3/28/2019 & rated 92 points: I always have a bottle of Sherry in my fridge - vastly under appreciated as a category. It’s prime for my favorite activity - pre-dinner snacking. A good persistent Oloroso alongside toasted hazelnuts (yes must be toasted) and aged Gouda with the crystallized protein crunchies is ethereal.

This is a very good Palo Cortado, like a blurred Amontillado and Oloroso - deep and layered. Crystallized amber. Syrupy caramels, toffee, dried orange, soy, mushroom, and bitter walnuts. (1023 views)

Loving the aromatic mix of green olives, candle wax, sea salt, with richer notes of honey, graham cracker, apricot, lemon meringue. Texturally, this is rich and seductive but vibrant acidity and a dry feel keeps it bright and clean. Baked apple, apricot and salted lemon blend well with olive brine, sea salt, ginger, musky cologne, along with graham cracker and ginger. Gutsy but elegant at the same time. All Palomino grapes, 20% alcohol, about 6 g/l of residual sugar. (1109 views)

Doften fantastisk med maccademianötter, smör, honung, mjukt fett, söta frukter.

Smaken direkt spretig och spritig. Eneträ på tungan. Citrusfrukter med lite grillyta. Lätta sockeraromer från sockerrör men också betans söt-sträv-beska smak. Inte jättebra.

Väntar två dygn.

Doften än fetare. Fortfarande bra men här har den nog ändå tappat lite för min del.. .

... till fördel för smaken som nu blivit av med de värsta ungdomssynderna. Lite mer gula plommon, mjukare citrustoner och inte fullt lika spritig. Definitivt inte lika spretig.

Spain is the third largest wine producing nation in the world, occupying the majority of the Iberian Peninsula with vast diversity in climate, culture, and of course, wine. From inky, dark reds of the [Priorat] to dry, white Finos from Andalusia, Spain can easily boast of elaborating a wide variety of notable styles. Within Spain there are currently 62 demarcated wine regions, of which a handful have gained international recognition: [Rioja], Priorat and [Ribera del Duero]. Yet these regions are only a small sample of the high quality wines Spain produces. Regions such as Cava, Penedes, Somontano, Galicia, Rueda and Jerez are only a few of the numerous regions worthy of exploration throughout Spain. Spain can also lay claim to having the most land under vine in the world, growing up to, by some accounts, 600 indigenous varietals of which Tempranillo is their most well known. Other popular varietals include [Garnacha], Bobal and Monastrell for reds and for whites; the infamous [sic] Palomino Fino grape which is used in the production of sherry wine, Pedro Ximenez in Montilla Morilles, Albarino used in the creation of the bright, effervescent wines of Galicia, and Verdejo in Rueda. - Source: - Catavino.net

Spain is not in the forefront of winemaking for its dessert wines, other than for its sweet wines from Sherry country including the highly revered Olorosos (when sweetened). But apart from Sherry Spain has a range of styles of dessert wines, ranging from the those made from the Pedro Ximenez grape primarily in Jerez and Montilla-Moriles) to luscious, red dessert wines made in the Mediterranean from the Garnacha (Grenache) grape. Some good Moscatels are made in Mallorca, Alicante and Navarre. The northwest corner of Spain, Galicia, with its bitter Atlantic climate, is even making dessert wines, called “Tostadillos” in the village of Ribadivia (similar to France’s “Vin de Paille”). The Canary Islands have made interesting dessert wines for centuries (they are mentioned by Shakespeare, for example) and in recent years the quality of winemaking has been improved and the Canary Islands wines are being better marketed now. The winemaking styles for “Vinos Dulces” are also diverse, from “Late Harvest” (Vendimia Tardía) to “Fortified Wines” (Fermentación Parcial). Based on in-spain.info.

Two suggestions for listing Sherries and Manzanilla wines from a frequent user in a time of change:

The vast majority of these wines are solera-produced and are therefore nonvintage; they should not be listed under a vintage date. A Saca (or bottling) can be listed with a date under Designation, since each bottling is liable to be somewhat different. Dates of accession to your cellar, if it seems important, can also be listed in Designation. <b> Only an Anada (Vintage) wine should bear a vintage date.</b>

Currently, Manzanilla wines (what used to be called Manzanilla Fino) need only be listed as coming from the wine region Manzanilla-Sanlucar de Barrameda. This assumes the 'Jerez' region, which need not be mentioned. For older wines, there may be some confusion about the origin and type. I would suggest following the label as much as possible. jht

Oloroso, sherries are ”born” when fino fails to form on sherry at the beginning of its life in the bodega or when a producer decides to fortify the wine enough such that the growth of flor is inhibited.
