No signs of 'over-the-hill' except for a few sediments. I think it could last another year if need be. I do have a temperature-controlled cellar so it's been stored well.
The wine looks ruby colored. The legs are very gluey slow. There is moderate sediment in the bottle. It smells and tastes like forest floor. The body is medium. The wine has round texture. The wine finishes medium. The wine has medium acidity. (2959 views)

Most tasters mistook this for the Santa Ynez cab because of its fruit. That said, it is a very enjoyable wine with soft tannins and a little tobacco box on the finish. Not a great cab but a very good one that is a pleasure to drink. (3120 views)

 Tasted by Night Train on 6/4/2010 & rated 91 points: I bought four of these at the winery in2004. They were transported and stored identically. The first two I opened, back in January, 2010, were DOA. Not corked, not cooked, not oxidized - just DEAD! This one, however, was TERRIFIC, fresh, vibrant, with a ton of explosive red fruit. I've experienced bottle variation, but this was ridiculous. Great nose, great mouthfeel, and a long, fruity finish. Very well balanced, with ample - but not obtrusive - acids and tannins. Please ignore my earlier comments (unless, of course, my fourth and final bottle turns out to be as bad as the first two). (3425 views)
 Tasted by Night Train on 1/31/2010 & rated 84 points: SLIGHTLY better than the bottle I had a few weeks ago. Unlike the last time, I detected traces of coffee, vanilla, and earthiness. In other words, it was a little more interesting than the previous bottle. However, this one seemed just as tired, and the total absence of tannins and acids made it a less-than-ideal match with food. (3588 views)

Tannins are faded, and this comes accross as somewhat syrupy, maybe a bit fatigued. I liked it better four years ago (but then, I was into big ripe wines then ... this is a bit ripe for my liking (although the real problem is the lack of acidity and tannin)). (3027 views)

I collected as many of the 90+ bottles in the under $40 range that I could find and I am glad I did. This has that unmistakeable scent of a Cab, hints of eucalyptus. This wine is really drinking very nicely as I have found most of the 01's are now. Soft and velvet like in the mouth with a good berry finish. (3722 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
