 Tasted by King Cab on 12/29/2023 & rated 98 points: Coravin'd in the morning and I knew we were in for a ride. Decanted for dinner 5 hours later and sat in decanter 1 hour.
Deeply colored without any sign visual of age. Nose was pure cassis driven blackberries and black cherry, and I mean black. Incredible. Palate showed a multi-layered array of all things Cab-good: deft fruits of the aforementioned with cedar-box, leather, cassis and creme de menthe. The roundness of mouthfeel was astounding. It was plush and elegant and classy all at once. Balance is fantastic and tannins are still present but covered by the layers of fruits so yeah, you get a little of the Iron Fist/ Velvet Glove thing. Longa and true, THIS is exactly what you sign-up for when you buy these premium Napa Cabernets, and at todays prices, you should get it more often. I place this in the same class as MACDONALD and Bryant Cabernets. Just amazing. (1085 views)

 Tasted by Omar Khayyam on 8/20/2023 & rated 94 points: The book club attacks Tolstoy's War and Peace with a multitude of perspectives (Sörmland, lake Båven): Delicious Napa Cab that manages to be both full of sweet cassis, some chocolate and some fresh laurel leaves but also fresh and fine (not too big body and everything in one place). Still not developed any tertiary notes but expressive and great food pairing. (1399 views)

A slight alcohol whiff, but it quickly dissipated Ink slate color. Cherry and blackberry flavors with a slight bit of chalk on the finish. Has some life in the bottle. (1671 views)

 Tasted by tcufletch on 10/2/2020 flawed bottle: Pulled the cork about 4 hours prior to consumption and let sit on the counter and then decanted just before. When pouring into the decanter, there was no overt fruit aroma...uh oh. In the mouth, there were some subtle tertiary flavors of minerals, flint, cedar, but the typical Panek-fruit was mostly non-existent. The acid was stronger here than the other components which pushed me to believe the bottle was flawed. It worked when we drank it with food (filet and sides) but by itself, it wasn't as enjoyable as the bottle should have been. (3275 views)
 Tasted by Cailles on 9/22/2020 & rated 93 points: Informal dinner, no notes taken. This wine shows sweet, well-defined Napa fruit, minerality, some baking spices on the nose and palate. Medium length, soft texture, a good amount of fine tannins and well-integrated acidity. It has improvement potential in terms of complexity and shedding more of its baby fat but it’s already drinking quite well like many 2012s.

Decanting: No extensive decanting needed but it won’t hurt either. (3644 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
