At first fruit, still alive and a bit muted, then a refreshing wash of tart acid (feels like cherry pie), combines to fruit aromas circling the ceiling in my mouth, and acid on the tongue, at the bottom of the mouth below the tongue is a mild grip of friendly tannins. It’s a harmonious and chill but fun and vibrant structure. It’s prime juice, with edges of tertiary but feels like mostly well buttressed primary flavor wine. Perhaps needs more time for the tertiary to further emerge but it’s a damn fine wine right now. sad it’s my only bottle, will look out for more. (1074 views)

 Tasted by WineBurrowingWombat on 3/4/2023 & rated 94 points: Don't tease me like that unless you mean it (Chateau de Brion): On the nose are lovely aged red fruits with a gentle touch of pleasant leathery notes, gentle olive notes, and some cigar wrappings. On the palate are cherries, really subtle cranberries, dried and air exposed oak, leather, and a pleasant play on earth and stone. Nice showing this evening. Now might be a good time to drink but can obviously still go for years, depending how much tertiary notes you enjoy. For me, I'd enjoy these now. (1614 views)

Color still quite dark. Old school Napa Cab at 13.5% Alc. Nose of cigar box, tobacco and dark cherries. Long finish on this still. Incredibly smooth and silky at this age. Last glass after 3 hours starting to go flat. Drink soon. Glad to have found this gem deep in the cellar. (1847 views)

Flavors of blackberry, dried cherry, dried current, hint of plum, earth and fruitcake. Ends with a fabulous 40 second finish with blackberry and dried cherry notes. This still has a lot of fruit and is mouth coating. Excellent! (1401 views)

The wine starts a bit simple with black cherry and plumb, almost like some straightforward Merlots, but gradually adds complexity with spicy red berries (gooseberry and European hawthorn berry, familiar from the place we grew up), tobacco and light spices. The wine looks ruby colored. The legs are medium. There is moderate sediment in the bottle. It smells like blackberry and red currant. It tastes like blackberry. The body is full. The wine has smooth texture. The wine finishes medium. The wine has low acidity. (1216 views)
 Tasted by bsumoba on 11/25/2021 & rated 92 points: Aged Napa wine! 24 years young and this is definitely moving into the tertiary flavor profile. I get a lot of maple syrup, reduction notes and some mushroom forest floor. Some slight fruit notes but maybe more along the lines of dried fruit. Compared to the 99' Peter Michael Les Pavots I had yesterday, this one progressed much faster in its evokution. Two bottles left of a wine that my wife and I had on our very first date back in 2008. Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
