Upon initial opening, this wine has an unusual mild effervescent mouthfeel that disappears with aeration. Aromas of dark bramble fruit and cherries, a hint of thyme?follow through in flavour with mild toasted oak and tannins.

Primary fruit with a bit of black pepper and herbal notes on the nose and palate. (828 views) | | Tasted by WineTonite? on 10/4/2018: The 2016 is a blend of mostly Merlot and Cabernet Franc with a splash of Syrah. It is a dark purple/garnet colour. It has a rich, full mouthfeel of blackberries, cherries, light peppercorns, and roses on both the nose and the palate. The wine has medium tannins and acid.
It was slightly too heavy for its initial pairing with an elk sausage red sauce pasta, but paired well with grilled filet mignon a couple of nights later. I think the opportunity for the wine to air improved its flavour.
So, I think this wine is a bit too young to drink right out of the bottle now without decanting. Give it 1- 2+ years for this wine to soften, flavours to meld and improve with age.
