| La Source du RuaultJean-Noël Millon a pris la succession de son père à la tête de l’exploitation familiale en 1998. Ainsi, cette passion pour la relation entre la terre, la vigne et le vin se transmet depuis sept générations. Aujourd’hui, le domaine exploite 14 hectares de Cabernet Franc et 1 hectare de Chenin sur des sols turoniens essentiellement argilo-calcaires. Ces terroirs sont à l’origine des appellations Saumur Champigny, Saumur Blanc, Cabernet de Saumur et Crémant de Loire. Afin de respecter l’environnement et d’exprimer au mieux le terroir, mes efforts s’orientent de plus en plus sur le travail du sol en supprimant l’utilisation de désherbant. Le vignoble est planté à une densité de 5500 pieds à l’hectare, dont une partie est enherbée en fonction de l’écosystème. Quant à la conduite du vignoble, une remise en cause est faite chaque année afin de s’adapter et d’optimiser le potentiel du millésime (éclaircissage, effeuillage,…). La vendange se fait à la main pour les cuvées «Vieilles Vignes », les blancs, les rosés et les Crémants de Loire. Pour la vinification, les raisins sont triés et éraflés, puis acheminés par gravité pour la macération, qu’elle soit pigée ou remontée (2 à 3 semaines). L’élaboration des vins se fait dans notre cave en tuffeau à 9 mètres de profondeur. Une fois mis en bouteille, le vin est stocké quatre mois minimum en cave, pour être vendu à des particuliers, des restaurateurs, des cavistes et aussi à l’export.
