 Tasted by Quiller on 5/10/2024 & rated 87 points: Opened, poured and let sit about 1 hr. Then: Maybe some dark fruit on the nose. Initial taste is dark fruit, maybe a bit sweetish; kind of rich, warm mouthfeel; acidity and tannins OK; fruit fading on the finish and maybe a bit disjointed from the entry. Fruit/taste fairly monotone through the rest of the glass, warmth and sweetish feel persists, but overall taste doesn't improve. Nothing close to a cabernet profile.This seems to be a drop-off from the bottle I had in March, 2023. Waiting a year did not help. I have several bottles of this left and will try another in a month or so to see if this one is just an outlier. (167 views)
 Tasted by Quiller on 3/10/2023 & rated 90 points: Opened, poured and let sit about 1 hr. Quick sip on opening and maybe some dark fruit, but not much; fairly tight; quite structured. Then, after 1 hr from opening: Maybe some dark fruit on the nose. Taste is dark fruit, but still minimal; maybe beginning to unwind; acidity good; balance reasonable; medium+ weight. Over the next 45 min the fruit becomes a tad sweetish; structure softens a bit; reasonable finish. By the end of the glass, tannins are becoming more noticeable, but not a distraction. I have more of these and will wait at least a year to try the next one.
Day 2: In case anyone is interested and/or thinking it may give a hint as to where this is going: Considerably softer, almost mellow, but still good structure. Nice mouthfeel, good balance, sweetish fruit more in evidence; fairly monotone in taste. Still, minimal traditional cabernet profile, both Day 1 and Day 2. Pleasant wine, but not that interesting after a couple of sips. (1029 views)

 Tasted by nickgorski on 4/4/2021: An hour of air and served at 60F. Blue and black fruit, a streak of minerals in the mid palate, confection and sweetness on the finish. I found it integrated and ready for business, but a pairing of kielbasa and pierogi may have helped make it work. (1979 views)
 Tasted by TastesGoodToMe on 12/10/2020 & rated 92 points: Year and a half since my last bottle. I would say it has not really improved - but that sounds like my first experience was bad. It was not. And this wine appears polarizing a little based on reviews. But we loved it. Butter popcorn notes on the nose (weird I know, but that’s what popped into my head). Dark fruits, with a little cherry, some saline and mineral notes with the right touch of sweetness. Medium finish. (2828 views)

Starts with blueberry and raspberry but shifts to some mint jelly flavors before finishing with some cigar ash and white pepper. There is an overly sweet medicinal aftertaste that lingers. Much like my prior notes, this wine is in search of itself, it's in a better place with this bottle. The color, deep ruby red transitioning to purple with a nose of soft purple floral aroma. On the palate, dark berry fruit, currants, slightly tart dark cherry fruit and some soft acidity. This wine is still evolving and will benefit from bottle time. This was a pop and pour experience with half of a bottle remaining. 92+ Points. (3132 views)
 Tasted by Badmonkey on 7/11/2020 & rated 92 points: Get together with friends. Purple fruit - currants, dark cherry, blackberry, and a little blueberry. Smooth mid-palate with a nice purity and solid depth/concentration - medium plus body. Nice rich flavors of dark berries, some spice/licorice, and a little graphite component. Decent finish but not overly long nor deep and a little tart - a little bing cherry on the back-end. Popped/poured but drank out of a decanter for a couple hours. Improved a little with time. Drank next to a 2017 Becklyn Napa cab and 2017 Quivet Kenefick Ranch cab which were a couple points better in my opinion. Similar thoughts with this cab as a year ago - I believe the Pellet fruit still needs more time. Going to lay the other bottles down for another year. 91/92 at this stage. 100% cab. (3607 views)

Powerful nose of black cherry, cooked fruit, licorice, vanilla, leather. Wine is developing. Dry palate, medium plus acidity, high alcohol, full body with pronounced flavor intensity of black fruit, eucalyptus,nutmeg, chocolate. Finish is medium. Very good wine, ok to drink now but probably should be aged for 3-5 more years. (2272 views)

Reading reviews that said it was still young, I decided to give this a long decant. Tried 2 hours in and it was singing, tad bit of earth along with nice dark fruit. Started drinking it at the 4 hour mark and fruit was still there but it had faded a bit. Great QPR (2623 views)

On the palate, blue blackberry fruits, currant, a hint of dry cranberry and some acidity.  Tasted by cablover123 on 3/21/2020 & rated 93 points: My first Quivet and wanted to check it out as I am a Carter fan. Aerated and poured. Dark fruit, spice and tar on the nose. Dark fruits with a bit of greenness on the palate.

Day two was a marked improvement. ( 1-2 points) The dark fruit and earthiness came thru. Still had a bit of heat.

I will let my others rest for 3+ years as I believe that they have room too improve. (2298 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
