 Tasted by TashNYC on 2/10/2023 & rated 92 points: Shabbat Dinner at Pam and Dean's with Wine (Princeton, New Jersey): This drank quite well. Notes of almond, apple, pear, honey and lots of apricot. This will be really great in 5 years (will there be any left?!) -- but good now, too.

I brought it to pair with the fruit plate (including oranges, apricots and almonds) and was quite surprised to find a delicious chocolate cake, too - which did NOT pair at all.

How nice our friends like sweet wines! Have to remember that :)

 Tasted by jdkrabbe on 7/10/2021 & rated 86 points: Day bright pale gold. ~ Nose of pear and apricot skin. Honey hints and @[1|35386745|Erin Cubley] id’d as honeysuckle which was beyond my skill. Fully body cooked pineapple like a pineapple upside down cake. Marmalade. Flan notes leading toward malo thoughts but reading indicates lees aging rather than malo conversion. Some candied lemon rind at finale. ~ Generally delicious, med+ acid, no sense of how much alcohol in this due to the residual sugar. (1718 views)

The palate is however a bit simpler, with good sweetness and acidity, but lacking complexity. Drank better in the champagne glass than a regular wine glass.

We had it with our friend’s homemade peach cobbler, which was an ok pairing (but not perfect).

Baked pineapple, clover honey, and candied tropical fruits dominate, with lively orange peel acidity taking over late.  Tasted by bretrooks on 11/17/2019: One small glass consumed over ~45 minutes while warming from fridge temp to cool room temp. Honeyed but not cloying, and providing a moderate hit of bitterness from botrytis. However, this wasn't very interesting overall - it came across as simple, short on acid (even for a Sauternes), and slightly dilute. Perhaps it's just in a phase due to its youth, but I probably won't be going back for more, myself. Fortunately, our company was fantastic, and this was preceded by a very satisfying red. Chateau Suduiraut Sauternes Bordeaux France

Just down the road from Yquem, is the large, beautiful estate of Suduiraut, 40 km from Bordeaux. On the left bank of the Garonne, Comte Blaise de Suduiraut built the this noble and aesthetically brilliant Château that is replete with stunning gardens designed by the very famous Le Nôtre. Suduiraut is one of the great wines of Sauternes, reknowned for their aromatic complexity and wealth of exotic flavours. The Château’s privileged sandy soils are well-drained and layered with gravel. In September misty mornings are followed by warm afternoons that allow for the development of botrytis cinerea, or noble rot. This in turn delivers the rich and distinctive taste of sweet but balanced wines kissed by honey and marked by lively acidity and opulent textures.

Their experience of assemblages of Sémillon (90 %) and Sauvignon (10 %) offer a full-bodied wine of a beautiful gold colour with amber tinges. The wine lies in wooden barrels for 18-24 months. This Sauternes displays harmony, power and marked complexity.

Forty kilometres south of Bordeaux, Sauternes is an AOC that includes together 5 communes, including Barsac. For centuries, humans have been patiently learning to master this region's climate, soils and grape varieties. But Mother Nature did a good job laying the foundation. The Sauternes terroir is distinguished by a geological predisposition to gravel and pebbles that cover limestone streaked with veins of clay. In the communes of Fargues and Sauternes, a layer of hardpan (iron-oxide cemented sand) in which vines flourish can be found. The vineyards at the highest elevations and farthest from the river have the best terroirs and produce the majority of the Crus Classés, including the monumental Château Yquem.Sauternes wines are made from Sémillon (80% of vines planted) and Sauvignon (15%) grapes. A bit of Muscadelle occasionally is used to give the wines an untamed touch. Sauternes have an "aged gold" colour that is denser and darker than other dessert wines. When they age, they develop a stunning amber colour. The nose has aromas of flowers and fruit that melt together to create a bouquet of remarkable complexity and balance. The primary aromas include almond, quince, mango, pineapple, stewed peach, dried apricot and passion fruit. There are also floral notes, with touches of linden, acacia, mimosa and honeysuckle. And as is typical with Sémillon, there are also notes of beeswax, almond and hazelnut. In the mouth, Sauternes wines have a powerful style that is viscous but extremely elegant. Its strong sweetness is captivating. Finally, its aromatic finish is something that simply must be experienced.
