 Tasted by Somm David T on 1/20/2024 & rated 91 points: A glass before dinner. Really fell in love with this producer during my visit in October 22. I like the style of their cuvées and their neutral wood use. They are a producer that ferments in wood more than most.

The nose shows; overripe pineapple, very ripe yellow peach, Bosc pear, mix of red & green apple, white citrus blend, touch of apple cider, brioche, bread dough, saline, sea fossils, withering yellow lilies and spring flower bouquet.

Nice mouth entry, juicy and round. very ripe yellow peach, overripe, juicy yellow peach, nectarines, ripe Bosc pear, mix of red & green apple, white citrus blend-white & pink grapefruit dominant, touch of apple cider, some marmalade, honey notes, brioche, bread dough, vanilln & caramel hues, baguette crust, saline, sea fossils, understated, soft chalkiness that presses the palate on the long set, soft raw ginger, white pepper, withering yellow lilies and spring flower bouquet, round rainfall acidity, well structured, nicely tensioned, balanced, elegant finish that lasts a full minute.

 Tasted by dera on 1/3/2024 & rated 91 points: Golden/Straw color. Hardly any mousse or bubbles. Slightly muted nose with lemon merengue, peach, yeast, toasty almonds. Palate is fresh and the blend is likely Pinot-driven with plenty of acidity, notes of citrus, peach, brioche and ginger spiciness. Finishes long but not very complex. Still a nice champagne, but the "higher end" cuvees from Vilmart are definitely more special than this. (1251 views)

I can't believe its been a year since I had one of these. What the heck. Anyway, this was a fantastic bottle; very fresh and bright, pear, citrus, citrus zest, lime, creamy, nice acid.  Tasted by Somm David T on 9/22/2023 & rated 91 points: Vilmart makes excellent cuvées using neutral barrels, which makes for more complex wines. Yet, they do not push the oxidative characteristics too far for my palate. They were an excellent visit last October.

The palate leads with juicy lemon pulp, pineapple juice, lime zest, kiwi, green & golden apple, some haunting Bosc pear, inside of the banana peel, ginger, saline, powdery & crumbled chalkiness, biscuits, baguette crust, some yeast, limestone minerals, vanilla, caramel, cream, yellow flowers, jasmine, excellent co2 and acidity with a well structured & balanced finish that lingers a minute & a half and does not fade. Excellent 375ml valve.

Derived from the 2017 vintage and complemented by reserve wines from 2015 and 2016, it was disgorged in 2019 with nine grams per liter dosage. 30% Chardonnay – 70% Pinot Noir classified Premier Cru. Aging ten months in oak barrels, no malolactic. (1703 views)

 Tasted by Somm David T on 9/16/2023 & rated 91 points: Vilmart is a producer that I don’t see posted often. I visited this property in 10/22. Ate the fruit they left behind two- three weeks after they picked the Pinot Noir in their Clos des Goisses vineyard. So bloody delicious. Once you’ve had a steady diet of vineyard grapes, you can no longer eat table grapes. The thing to know about Vilmart, they embrace neutral wood barrels. It’s what makes their cuvées so complex…the wood & air. This is one of their entry level cuvées.

Tonight is a four-course…finishing w/ apple tart from the farmers market. Pairs nicely. The palate is; golden & green bruised apple, Bosc pear, tropical fruits-green melon, kiwi, pineapple juice, lemon & lime flesh, tangerine hues, vanillin, cream, saline/sea spray, toast, brioche, touch of ginger, moist, fine chalkiness, grey volcanic minerals, beautiful acidity, yellow lilies, jasmine, well balanced and polished finish that lasts minutes.  Tasted by Frank Murray III on 6/26/2023: JUne 2021 disgorgement. This is the Pinot dominant non-Rose cuvee, with 70& Pinot Noir and 30% Chardonnay (which is the inverse of teh Chard dominant Grand Cellier). Given the way Vilmart builds this cuvee (like Grand Cellier), this should be base of 2016 - 2018, with 3 years on the lees. Opened this yesterday. If my read of the wine is accurate, the Pinot Noir is giving this a good spine--It's very perceptible as it hugs the wine and carries the fruit very well. With the fruit, a tangy blackberry, a purple savory fruit that mixes with a yellow apple, then the citrusy lime and orange flesh that Vilmart brings through so well with just about everything the house makes. Finishes a little spicy, with a light minerality. Fresh and juicy, let's keep in mind that this is $42 US locally. Crazy I skipped buying this for so many years but I am gonna fix that, fo sho. France - When it comes to wine, France stands alone. No other country can beat it in terms of consistent quality and diversity. And while many of its Region, Bordeaux, Burgundy and Champagne most obviously, produce wine as rare, as sought-after and nearly as expensive as gold, there are just as many obscurities and values to be had from little known appellations throughout the country. To learn everything there is to know about French wine would take a lifetime. To understand and appreciate French wine, one only has to begin tasting them. Sub-Region:

Champagne - The French region of Champagne (including the cities of Rheims, Épernay, and Aÿ) was the first region in the world to make sparkling wine in any quantity. Today, the name of the region is synonymous with the finest of all sparkling wines, and wine-making traditions of Champagne have become role models for sparkling wine producers, worldwide. Surprisingly, the region of Champagne is now responsible for only one bottle in 12 of all sparkling wine produced. Styles of champagne range in sweetness ranging from an extra brut or brut 0, to the basic brut to demi sec to doux; some houses produce single vintage champagnes and others produce non-vintage (or incorporate wines/grapes of multiple vintages), often to preserve a specific taste; combinations of grape varietals; and colors, including a rosé. There are several sub-appellations, including the Valley of the Marnes river running from Épernay west, Massif de Saint-Thierry north and west of Rheims, Valley of the Ardre, the Mountains of Rheims (between Rheims and Épernay), Côte des Blancs, Côte de Sézanne, and Côte des Bar in the South. Champagne wine only uses three grape varietals (cépages): Chardonnay, Pinot Noir, and Pinot Meunier.
