Drink up ASAP. This is much softer than what's expected from Caymus SS. Classic profile, but not likely to improve. Slightly past its peak already, but can still be enjoyable if you don't mind that. (1516 views)

Full, fragrant & attractive nose of ripe fruit aromas of cherries, plums & dried figs with overtones of classic notes of tobacco/leather/cedar & earthy/dusty notes, minerals, mint & a hint of oak/vanilla in the background. Full bodied with a very good concentration of well balanced & silky smooth textured, ripe fruit flavors of cherries, plums & dried figs with herbs, minerals & a touch of cedar. Lingering dry finish. Drinks well at present but at 39 years of age it is at or close to its peak of development. Cork was clean & intact; fill was in the mid-portion of the neck well above the shoulder. (1329 views)

 Tasted by Papies on 9/17/2019 & rated 95 points: We opened this on the follow of 3 badly premoxed Leflaive grand crus and delivered the uplifting in spirit we needed. Nicol tried this blind went straight for Cab Sauv from Napa but guessed around 10yrs younger. And in this lies the greatness of this wine it is still fresh and vibrant.
Evolved for sure with solid secondary profile on the noise, leather, earthy under tone ( The nose is to die for here) but with a nice healthy dark fruited note and of course a peppery/ herby touch. The palate is very much alive and frankly this has easily another 10yrs in the tank but its just delicious now if like us one is a lover of well matured Napa elegance. 95 + and must buy more

The body is Medium/Full. The wine has Smooth texture. The wine finishes Medium. Awesome display for a 30 year old wine. When California vintners get it right they really show off. (7013 views)

While the backbone had certainly diminished, there was still discernible fruit on the front palate, a velvety mid section of chocolate, tobacco, dark fruit, and a reasonably long finish that made you want to go back for more. If you enjoy "mature" wines, this is a winner. Won't last much longer - even if perfectly cellared. (6271 views)

 Tasted by Goldstone on 2/4/2011 & rated 92 points: Chinese New Year Dinner ("The Dining Room", Aberdeen Marina Club, Hong Kong): Blood red colour that is totally opaque - looks like a 2000. Nose is barnyard, sweaty jockstrap in a pleasant way. sweaty saddle, lots of dark berries fruit and amazingly fresh for its age. Palate is sharply delinated blackberries with a drying autumnal blackberries end. Lovely acidity and poise. Cassis! Resaonable length and with some resonance in the head on the finish. Held up well in the glass on the nose but the palate collapsed after an hour into acidity and tannin, suggesting this really needs to be drank up now. I enjoyed this a lot but the Montelena 1987 was a step up. (7172 views)

 Tasted by scottj on 10/4/2008 & rated 89 points: Purchased at Dragers in Los Altos, CA on release for $34.95 (still had the price tag on the bottle). Decanted for sediment, and tasted after about 10 minutes. Lovely bouquet of red fruit, cigar box and leather. Sweet cherry flavor that blossomed after about 15 minutes then began to fade. Medium bodied with fully resolved tannins and a somewhat clipped finish. Past its prime, but still a nice drink. (2663 views)

 Tasted by steffenpelz on 12/28/2004 & rated 90 points: Prime Rib and Fabulous Wines: Clearly younger than the previous wine. Quite a bit of tannins on the palate and darker ruby red in the glass. Very balanced with a loong finish that ended on a dry note. I guessed late 80s/early 90s and thought it may be a younger version of the previous wine. I thought CA or Oz again, as the wine didn't appear to be from Bordeaux. (4145 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
