 Tasted by AudunG on 8/4/2023 & rated 91 points: Surprisingly dark and developed color, which became lighter after a while. Aromas of nuts, vanilla, smoke, anise/chervil and some sea shore. Soft, light weighted and elegant, and quite typical for 2007. A bit over the top, maybe. (370 views)

 Tasted by vinkeger on 1/14/2023 flawed bottle: Virker veldig utviklet ved åpning. Nedfallsfrukt og litt platt. Virker 10 år eldre enn den er.

Lar den stå åpen i et par timer. Blir faktisk betydelig bedre.

De overmodne aromaene forsvinner stort sett. Tilbake står en vin som har gul og smått eksotisk frukt, med et tydelig salt innslag. Har fortsatt mye modning.

I munn er den ganske syrlig og litt skarp, på en dårlig måte. Raveneaus viner pleier å være nokså softe og behagelige, men denne er ikke det.

Fortsatt en god vin, men må ha vært en suboptimal flaske. (723 views)

 Tasted by peternelson on 10/17/2020 & rated 94 points: Slightly dark gold but clear and bright in great shape; complex nose of soft spices, caramel, apple skin and the like; rich, almost oily mouthfeel but elegant on the palate, slightly less concentration than the Dauvissat Clos, but more intense in flavor; amazing super long finish. Killer Chablis especially at this age. The 07 Les Clos was excellent too but was overshadowed a bit with its youth. Oo Toro in Walnut. (1523 views)

I see it was 5 years since the previous bottle and so I can report conclusively that this wine has benefit massively from 12 years of age. In a perfect spot NOW

 Tasted by cos82 on 12/13/2018 & rated 91 points: Very pale almost like water. Nose of minerals. Smooth and balanced palate of mostly minerals. Lacking acidity, but nice nonetheless. Served a bit too warm. (1444 views)
 Tasted by drwine2001 on 7/8/2018: Medium yellow that retains a green glint. Last year when I had a bottle of this, sulfur made it somewhat difficult to appreciate-not this time. All oyster shell, iodine, and herbs aromatically. Medium weight (lighter body than many Raveneaus) with just a kiss of wood giving depth but none of the honeysuckle/beeswax that can mark these wines. Just a youthful, brothy, mineral elixir in the mouth that makes you wonder how in the world this came from a grape, yet it doesn't make you pine for any lack of fruit. Overtly saline finish. Pretty much perfection for Premier Cru Chablis, and this bottle shouted its origins more clearly than almost any other Chablis I've had recently. I think that 2007 can be greatly underestimated in the region. (1915 views)

Stille og rolig vin.
Subtil med vakre dufter av blomster, krydder, sitrus og kritt.
Ok - flaskens eier kåla med karafler!
Dette er Raveneau Vaillons 2007.
Legger på seg med varme i glasset.
Smooth og relativt rik munnfølse med pen moden frukt.
Fresh syre.

 Tasted by B Paul on 3/25/2018: Has the lemon cream going on. Well-balanced with good zip that keeps you coming back to the glass. Another fantastic Raveneau. Drinking well now but, like many of these wines, this is aging very slowly and probably has years to go. (1563 views)
 Tasted by drwine2001 on 12/8/2017: Light yellow, definitely paler than the '07 Dauvissat Vaillons next to it. A brief whiff of the Raveneau creaminess and then deeply embedded sulfur which took a long time to loosen its grip. Like the Dauvissat, well and truly Chablis in its bracing acidity and austere citrus tilting toward orange rather than lemon, but eventually, more wood showed up, giving it a broader feel. Begrudgingly, it became more floral with air. This wine is stubbornly young and needs to be decanted for at least a few hours if it is to be fully enjoyed now, but better still, leave it for another 3 to 5 years. For current drinking, the Dauvissat wins hands down.

Well, the sulfur did its preservation magic overnight and was greatly diminished the next day. Now the wine is rounder and shows more of the Raveneau texture and flavor of beeswax while retaining impressive shape and a lemony core. After retasting it tonight, I am much more confident about a very positive future and long evolution. (1834 views)

Fin intensitet med litt pondus.
Vokser veldig.
Elegant munnfølelse.
God konsentrasjon og fin friskhet.
Intensiteten drar på i mellompartiet.
Veldig presis og stram i utgangen.
Dette tåler mange år.
Lang finish med en nydelig krittaktig mineralitet.

Fet munnfølelse, tett og konsentrert, mineralsk, og med en intens og prikkende syre. Kjempelengde. Har ikke skjønt meg helt på chablis til nå, men dette begynner å hjelpe. Denne skulle jeg gjerne prøvd igjen om 5 år! (1382 views)

 Tasted by drwine2001 on 8/11/2015: Light yellow, not perfect clarity. Very Chablis nose of brine and iodine more than fruit. Light to medium weight, full of limestone, a tad of creaminess, but much leaner than the typical Raveneau feel. Tart, underripe lemon fruit, very strong acidity and minerality. Unlike the last bottle 3 years ago, very young, strict, and unevolved. This did not change much over 2 hours. Excellent "vrai Chablis". (2666 views)

A wondrous mélange of flint and mouthwatering layers of apple core, grapefruit, white peach, and creaminess on the palate. Spiny acidity providing amazing freshness, balanced by plenty of structure. Long, ringing finish of mineral and almost salty white fruit. Perfect with steamed mussels and a dynamite showing. (1997 views)

Les vins de Bourgogne (Bureau interprofessionnel des vins de Bourgogne) (and in English)

Burgundy - The province of eastern France, famous for its red wines produced from Pinot Noir and its whites produced from Chardonnay. (Small of amounts of Gamay and Aligoté are still grown, although these have to be labeled differently.) The most famous part of the region is known as the Cote d'Or (the Golden Slope). It is divided into the Cote de Beaune, south of the town of Beaune (famous principally for its whites), and the Cote de Nuits, North of Beaune (home of the most famous reds). In addition, the Cote Chalonnaise and the Maconnais are important wine growing regions, although historically a clear level (or more) below the Cote d'Or. Also included by some are the regions of Chablis and Auxerrois, farther north.

"... a hybrid of 2004/2007 and 2010. The stone, citrus and limestone amalgam is exactly what we search for in Chablis as the style harkens to a day in the Cote de Beaune proper (1960's - 1980's) when wine was not meant to be consumed the week it was released, battonage was not used by all and new oak was rarely seen ... the texture is natural and 'of the vintage' not 'of the winemaker' .... Like Sancerre or the Loire in general, 2014 in Chablis is one of those rare years with extract and transparency. It appears to be a vintage for the "neoclassic" ages and those of us intent on cellaring the most terroir-driven (but still powerful) examples of vineyard, site-place and varietal will want to invest (heavily) in the magnetic and electric 2014's." - Jon Rimmerman

2018 Vintage Notes:
"There’s not that razor sharp Chablis acidity in 2018,” says Patrick Piuze. “But there is good definition of place. The dry conditions drove vines to drink deeper down in the soil profile."
