 Tasted by chatters on 3/14/2013: Tasmanian Wine Tasting 2013 (Oak Barrel, Elizabeth Street, Sydney): Aromas of brambles, leather, cedar, herbaceous notes - mint and touches of eucalyptus, slight pencil shavings. In the mouth there are flavours of leather, bramble, cedar, spice, long finish, very nice. (2516 views)
 Tasted by Paul S on 9/15/2011 & rated 92 points: "Simple" Midweek Dinner (the Gang Goes Spanish) (Bilbao Restaurant, 111 Somerset): How unusual - my first Tasmanian Cabernet of any age and this, with some 16 years under its belt, was very good indeed. It had a lovely nose, full of lush, earthy, tobacco-ey tones wed to some roasted capsicum, plums and cassis and even a bit of cedar, a mix that got most of the table guessing left-bank. The palate was wonderfully drinkable. Silky smooth, velvety soft, with fresh acidity lapping against gentle dark-fruited tones, this was again seasoned with more tobacco-leaf and earth notes towards the finish. Not the deepest, longest or most complex, but boy it perfectly integrated and realy delicious. A very nice wine indeed - I enjoyed this tremendously. (3330 views)

Domaine A Cabernet Sauvignon

Domaine A Cabernet Sauvignon is a wine of absolute dedication, built from the ground up according to a rigorous viticultural regime and uncompromising approach to winemaking. Domaine A Cabernet hails from the finest parcels of fruit each season. These are the smallest grapes with the most intensity and thickest skins from the higher slopes. It is an assemblage of classic Bordeaux varieties.

The grapes are harvested entirely by hand from old estate vines. Typically, veraison will happen in February and picking in mid April. Domaine A Cabernet Sauvignon is crafted in small batches employing traditional techniques including open vat fermentation, regular racking and hand plunging with extended time on lees.

It is matured in 100% new French oak barriques for 24-36 months. It is bottled unfined and unfiltered and rested in the cellar for two further years until ready for release. Domaine A Cabernet Sauvignon has a proven record of critical acclaim in company with the great wines of the world. It is recognised in the elite echelon of Australian wine and enjoys a strong following among collectors.

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon
