  Served by the glass. A lush chalk mineral nose, pure albariza gives way to a very short mouth, without length where only a sharp acidity saves the tasting. It gives me nothing special.
  
  Servida por copas. Una exuberante nariz de mineral de tiza, de pura albariza deja paso a una boca muy corta, sin longitud donde únicamente una puntiaguda acidez salva la cata. Me deja muy frío.

• NV Sánchez Romate Hnos. Jerez-Xérès-Sherry Fino Perdido

  Nose is queen here. Complexity to the limit with a rancid aromas which transports me to a decadent Indian atmosphere, where salinity invades everything. Superb. Unfortunately on the palate this fino hadn't the same high level: short aftertaste, no length at all, a bit muted to my taste. Faith in Sánchez Romate restored.
  
  La nariz es la reina aquí. Complejidad al límite con unos aromas rancios que me transportan a una decadente atmósfera india, donde la salinidad invade todo. Magnífico. Por desgracia en el paladar este fino no tenía el mismo alto nivel: postgusto corto, sin longitud en absoluto, un poco apagado para mi gusto.

  Served by the glass. Just the opposite of Fino Perdido: a mute nose that gives way to a tasty palate, long and with a true sense. Its old age does not manifest at all. To watch.
  
  Justo lo opuesto al Fino Perdido: una nariz muda que da paso a un paladar sabroso, largo y con un sentido verdadero. Su vejez no se manifiesta del todo. A vigilar.

  Served by the glass. Very saline on the nose but with a slight sweet note, a defect in my humble opinion. In the mouth it has depth but it seems too short. Better marketing than a compact, final product.
  
  Servida por copas. Muy salina en nariz pero con una ligera nota dulce, un defecto en mi humilde opinión. En boca tiene profundidad pero se me antoja demasiado corta. Mejor marketing que producto final.

  By the glass from a new bottle. Mineral to the bone on the nose. Candied citrus and chalky aromas that retain an acidic heart. In the mouth, on the other hand, it is very muted, without energy, it only presents an initial thrust that ends suddenly. A pity.
  
  Por copas de una botella nueva. Mineral hasta la médula en nariz. Aromas de tiza y de cítricos confitados que conservan un corazón ácido. En boca, en cambio, se muestra muy apagado, sin energía, sólo presenta un empuje inicial que se termina de forma súbita.

  By the glass from a new bottle. Aromas of citrus and yeasts tenuous but reaffirmed on the palate. It has a little bit of everything. It does not stand out for anything but presented as a nice set that should not be served very cold.
  
  Por copas de una botella nueva. Aromas a cítricos y levaduras tenues pero que se reafirman en el paladar. Tiene de todo un poquito. No sobresale por nada pero se presenta como un conjunto agradable que no debe servirse muy fría.

  For a half-bottle opened long ago and served by the glass. Tasty and at a good point right now. Mellow well balanced aromas of nuts and lactic. All complemented perfectly. The balance and all the elements (acidity, depth, density and aftertaste) are maintained in the mouth. Delicious. I've to insist.
  
  Por copas de una media botella abierta hace tiempo. Sabroso y en su punto ahora mismo. Melosos aromas bien equilibrados de frutos secos y lácticos. Se complementan perfectamente. En boca se mantiene ese balance y todos los elementos (acidez, profundidad, densidad y retrogusto). Delicioso ahora misma.

• 2009 Caveau de Bacchus Arbois Vin Jaune Cuvée de la Confrérie

  Served by the glass from a new bottle. Very closed at the beginning with notes of a wet cardboard with hazelnuts! When aired, aromas appear with very ripe white fruit with nuts and lactic memories. Fairly balanced. In the mouth it is tasty and has enough depth although I missed more structure and some bitterness after its passage through the throat.
  
  Servida por copas de una botella nueva. Muy cerrada al principio con notas a cartón mojado con avellanas. Al abrirse aparecen aromas muy maduros a fruta blanca con frutos secos y recuerdos lácticos. Bastante equilibrado. En boca es sabrosa y tiene bastante profundidad aunque eché en falta más estructura y algo de amargor tras su paso por la garganta.

  An Amontillado with a soul. On the nose yeast aromas have long gone and evolved into a cornucopia that includes notes of orange peel, hazelnuts, caramel, ...
  In the mouth it is not only delicious, it brings length and an eternal aftertaste. Endless density. Almost liquor-like. Even a slight sweet note well integrated. Impressive and really recommended if you can find it.
  
  Un Amontillado con alma. En nariz los aromas a levaduras hace tiempo que se fueron y evolucionaron hacia una cornucopia que incluye notas a cáscara de naranja, avellanas, caramelo fundido, ...
  En boca no sólo es delicioso, aporta longitud y un retrogusto eterno. Densidad sin fin. Casi licoroso. Hasta una ligera nota dulce bien integrada. Impresionante y realmente recomendada si es que logras encontrarla.

• NV Alvear Montilla-Moriles Palo Cortado Viejísimo Abuelo Diego

  By the glass. Initially smelled like the glue Imedio, blue color. After shaking the glass for a quarter of hour appear the typical notes of sour butter surprisingly our host did not know. In the mouth it is very far from the Amontillado previously tasted. It does not deserve its status of a wine with more than one hundred years of age.
  
  Por copas. Inicialmente olía como a pegamento marca Imedio color azul. Tras agitar la copa durante un cuarto de hora aparecen las típicas notas a mantequilla agria que sorprendentemente nuestro anfitrión desconocía. En boca se queda muy lejos del Amontillado catado con anterioridad. No merece su estatus de vino con mas de cien años.

• NV Bodegas Alonso Jerez-Xérès-Sherry Palo Cortado 1/8

  Just a few drops from a stylistic bottle. Hard to understand right now. Unbalanced on the palate where every element is on its own. Aggressive on the nose, alcoholic and quite simple. I would like some integration but doubt it comes in the next future.
  IMHO it doesn't worth to pay that price, sorry.
  
  Sólo unas gotas de una botella estilosa. Difícil de entender en este momento. Desequilibrada al paladar donde cada elemento está por su cuenta. Agresiva en la nariz, alcohólica y bastante simple. Me gustaría una cierta integración pero dudo que venga en el futuro próximo.
  En mi humilde opinión no vale la pena pagar ese precio, lo siento.
