Introduction

MJ, CJ, LR, MR. Mostly wines from the 80s.

Flight 1 - APERITIF (1 Note)

Jamon Serrano and Jamon Iberico de Bellota.

  • NV Barros Porto White Porto 88 Points

    Portugal, Douro, Porto

    Served over ice and a twist of lemon. Very Tasty. Loads of yellow fruits; Plump and round with nice yellow fruits, but this has very solid acids. Very nice aperitif.

Flight 2 - AMUSE-BOUCHE (1 Note)

Soft boiled egg (chives, sea salt, ground pepper, sherry vinegar, whipped cream and maple syrup)... inspired by David Kinch's version from Manresa.

Flight 3 - SOUP (1 Note)

Chestnut Madeira soup.

  • 1981 R. López de Heredia Rioja Blanco Gran Reserva Viña Tondonia 83 Points

    Spain, La Rioja, La Rioja Alta, Rioja

    I figured this would be a little oxidated, which is why I paired it with a chestnut soup. Indeed this did have a nutty/oxidated character, but perhaps a bit much for me. Some citrus, with a sour element to it. This did seem to freshen up and "awake" with air, but I never really warmed up to it. Interesting.

Flight 4 - FISH (1 Note)

Bay scallops in brown butter with Shanghai bock choy.

  • 1988 Domaine Auffray Chablis Grand Cru Grenouilles 93 Points

    France, Burgundy, Chablis, Chablis Grand Cru

    A pleasant surprise. This producer was unknown to me, but the wine shined. Classic Chablis profile of crushed limestone, granny smith apples and lemons. Very much alive, in fact it almost crackled with energy. It had the stern 1988 character, but this was not emaciated and lean. Full of life and fantastic.

Flight 5 - INTERMEZZO (1 Note)

Chourico assado.

  • 1988 Château La Mission Haut-Brion 93 Points

    France, Bordeaux, Graves, Pessac-Léognan

    A svelte and elegant wine. Full of lead pencil, damp earth and brown spice flavors. The fruit was subdued, but the secondary flavors were lovely. Lingering finish.

Flight 6 - MEAT (1 Note)

Braised beef shanks and nutmeg potato puree

  • 1989 Château Chasse-Spleen 91 Points

    France, Bordeaux, Médoc, Moulis en Médoc

    From magnum. I just love that lead pencil and cedar aromas that aged Bordeaux acquire. Medium bodied, fragrant and still very much alive. Not quite the depth of the 1988 La Mission Haut Brion served just before, but this was fine nonetheless.

Flight 7 - CHEESES (1 Note)

English Stilton, etc

  • 1991 Croft Porto Vintage 90 Points

    Portugal, Douro, Porto

    Decanted for about 5 hours. Cherry liquor, raspberries, spices and hints of cocoa. The tannins are soft; this is in a nice drinking window. An easy drinking and lighter-bodied style of port. On the second day a bit of a medicinal flavor crept in.
