Great Tasting Wines for a Great Tasting Menu

Introduction

Saison is a small, relatively new, highly creative, "garagiste" restaurant that is currently only serving dinner on weekend nights. Limited wine program, so worth calling ahead if you're contemplating bringing wine and creating your own pairings as we did. Mark Bright is the exceptionally knowledgeable young sommelier/owner.

  • 1990 Pol Roger Champagne Cuvée Sir Winston Churchill

    France, Champagne

    Medium yellow, gentle mousse remains. Toasty nose with a hint of caramel. Full, rich, moderate dosage. Not at all about fruit. Just on the cusp of turning into mature Champagne. Excellent but not as distinctive or exciting as the first bottle I had about 5 years ago, when the balance and tension were just great.

  • 1998 Hiedler Grüner Veltliner Novemberlese Thal

    Austria, Niederösterreich, Kamptal

    Medium yellow. Some sulfur at first, then creamed corn. Not much green here. Full bodied, lush, good acidity, nice bitter orange fruit. Very fresh. Maybe it could have used a bit more varietal character, minerality, and intensity, but that is probably a function of both its age and a looser style vintage.

  • 1990 Domaine Dujac Chambolle-Musigny 1er Cru Les Gruenchers

    France, Burgundy, Côte de Nuits, Chambolle-Musigny 1er Cru

    Medium ruby with no lightening. Explosive, sinuous nose full of black cherry, chocolate, toffee, and just a small dollop of stems. Voluminous for the commune, but at the same time shapely due to crisp acidity for the vintage. Silky with expressive tangy red fruit. Ah, Dujac! What a treat every time. This is in an ideal place now but should last well given its fabulous fruit and adequate acidity.
