    Looks quite mature. Nose typical of a left-bank Bordeaux. Dried thyme, prunes, red berries. Lovely wine, very elegant, slight hint of pepper on the palate. I liked it.

    Not as good as the 1998 IMO. Looking a bit younger though. Slightly medicinal, dusty. More pepper than I'd like, but otherwise quite nicely balanced.

Flight 3 - Suckling Pig with Glazed Endive, Licorice, Banyuls and Dried Grapes (4 Notes)

    Black-purple. Blackberry jam nose followed by a superbly balanced palate that's not at all a fruit bomb. Notes of bacon, velvety texture. Great stuff, no rush to drink it either.

    Still quite primary! Lovely fruit, great structure, ample tannins. Red stone fruit profile. Lovely wine but needs 4-5 years or so.

    Very smooth, medium weight. Lots of the tell-tale eucalyptus on the nose. Slightly minty on the palate. I don't think this will improve further. Drink now.

    Superb stuff. Molasses on the nose. Reminiscent of a Banyuls. Toffee / treacle / coffee / caramel flavors. Unique in a good way.

    Sparkling Shiraz? I don't know, I couldn't really connect with this. It's not that I hated it - I just found it weird. Must be an acquired taste.
