Introduction

Linden Wilkie's brainchild was to have an offline where four tables of six people sat down to a six course lunch, each person providing a wine to accompany a specified course. The wines were served blind.

A great concept, but the Ledbury chef added a twist by devising a menu full of things notoriously difficult to match. In the event we had some lovely wines and some lovely food, but neither particularly enhanced the other.

Flight 1 - with Pheasants Egg Wrapped in Katafi with Smoked Artichoke and Spring Truffle (1 Note)

Flight 2 - with Grilled Lobster with Sea Vegetables and Watercress (1 Note)

Flight 3 - with Terrine of Foie Gras with Cooked and Raw Apple and Sake (1 Note)

Flight 4 - with Calves Sweetbread with Caramelised Tongue, Roasted White Asparagus (2 Notes)

Flight 5 - with Suckling Pig with Peas and a Reduction of Dried Chicory (1 Note)

Flight 6 - with Violet Parfait with Blueberries, Frozen White Chocolate and a Blueberry Shortcake (1 Note)

    Nutty, focused mature sweetie - I thought it might have been Italian - super wine, rich, but not very sweet
