I was not as thrilled with the wines as I hoped I would be. Some were simply over sulfured, others were a bit jerky with alcohol, few showed the clarity of place that i remember. My favorite by day 3 was the the Sigalas stainless fermented wine.
2009 Sigalas Assyrtiko Santorini
Greece, Aegean, Cyclades, Santorini
smokey, savory, citrus fruit. balanced. the acidity is great and the wine is bright and energetic. didn't show the same overt fruit as a few days ago, but the savory undertone here is lovely. 2-3 years would be really good for this wine, i think.

2009 Gaia Assyrtiko Wild Ferment

there is a floral element on the nose that i like. metal and pumice and smoke. there is power here, and i cannot tell if it is the modern style or the 80 year old ungrafted vines. in any case, i'm intrigued, and it would be fun to check back on this wine in 3 years.

2007 Sigalas Assyrtiko Santorini

my favorite of the wines on day 3. the nose is penetrating, layered, and just gorgeous with white flowers and white fruit, if that makes any sense. melon, stones, creamy and leesy, smokey, just so well developed and articulate. delicious and compelling wine.

2007 Argyros Assyrtiko Estate

lots of sulfur upon opening, and also the smoke and weird legume thing of Santorini Assrytiko. on day three there are peas, lemons, smoke and mineral and there is sea spray on the finish - very expressive, to say the least. the palate shows in a much higher register than i was expecting based on the nose, and the lemon spritz is palpable. this one really needs a grilled fish.

lots of oak, a kernal of something floral, but all about oak right now on the nose. rich in the mouth, great acids and very intense, shows its place with smokey salty legume-y finish. i'd wait at least 5 years before playing with this again.

moe golden in color than any of the other wines. floral and heady, intense, a bit of something soapy too. oak oak oak. rich, ripe, and to my tastes, a bit overdone - this is 15% alcohol. i prefer the other Hatzidakis wines. but then again, perhaps this needs a lot more time in the bottle.

oak, smoke, pumice, preserved lemons - and this is all on day 3. the wine is balanced and focused , energetic, very clean on the palate, with sea spray hints. the alcohol sometimes juts out a bit though. will the oak integrate over time? if so, the wine could be great.
