Introduction

I was a guest along with my wife for the grand dinner and installation of new members for this Chaine dinner. The SWISSOTEL was perfect setting with a ballroom that had all 120 of us. It was deck out with videos of the Alps and winter scenaries. This was a real treat for me as I went to my very first wine and food event at a Chaine dinner in January of 1974 with my father at age 18 because my mom had a broken nose. So to return 37 years later was a treat and my many thanks go out to our hosts Beth and Mon.

Hosrs d'oeuvres: Comte Profiterole with clery root puree, onion caraway cappuccino, butternut squash puree pistachio cracker, cured salmon, preserved lemon compressed cucumber and smoked prig's trotters collard greens.

Foie Gras Mousse, Maine Lobster, Orange Vinaigrette

Flight 3 (1 Note)

Asiago Gnocchi, Regal King Crab, Seetbread Croutons, Parsnip

Flight 4 (2 Notes)

Squab Breast, Squab Leg Confit, Roast Vidalia Onion, Winter Truffle

Flight 5 (1 Note)

Black Trumpet-Dusted Lamb Loin, White Bean Puree, Lamb Shank Kale, Pomegranate Lamb Reduction

    France, Bordeaux, Libournais, Saint-Émilion Grand Cru

    Perfumed nose, lots of musty smell, good fruit, nice palate, good legs and color, wonderful as it sat there in the glass and developed

Stilton Savarin, Arugula, Frisee, Bacon, Pickled Red Onion, Crispy Prosciutto

    France, Bordeaux, Libournais, Saint-Émilion Grand Cru

    Same initial musty nose as the '90, blew off over time in the glass, older, great bright color, great depth on the palate, still had soft tannins, What a treat!

I only can hope that a return engagement does not take another 37 years.
