    V high cringing tight lemon acidity. White powdery lime and chalk. Sharp and precise with fresh bread. Extremely fresh and lively. Dry and mineral Needs lots of time. And seems a little too austere.

    Fresh and Tiight but approachable. Serious looking but fun. Fresh bread and Lemon Perrier with green apples and some red apples. More conventional style.

Flight 2 - Sauternes with foie gras (1 Note)

    HaZelnuts and truffle honey. Lucdious apricots. V concentrate and just almost hitting cloying but still pulling back with some mangoes acidity. Big at the start but finishes short.

Flight 3 - Two 64s with mushroom egg tart (2 Notes)

    Still looking pretty deep colored for it's age with dark brown red center and lighter diluted blood red at the edge. Rusty flowers with hints of sweet winter melon tea, black olives. Lots of aged black tea minerals and dried up earth and leaves. Sappy Sweet fruits still remains pretty lively with kumquat lift. Delicate burg assiness. Respectful and holding it's own to equal a grand cru at this age. Light footed but still walking, not yet in the grave at all. Lingering finish.

    Reductive portish nose but became chicken essence! Lots of it ! Lots of ripe black sweet licorice fruits that has been aged considerably till losing most of it's freshness. Waning with light tar and black muddied roses. Old rubber and rusty barnyard notes. Dying but really just chicken essence all the way double boiled

    Some sweet florals and light with date tea. V light. Touch and go. Nicely elegant n a nice wine. Not controversial and never gonna be attention grabbing.

    Pure gold and glowing. Chicken essence double boiled to perfection. Still mind blowingly fresh. Hints of good fino on the finish but the body is just stunning like a smart intelligent blonde haired model looking babe that also has a harvard double degree. Mind blowing and superbly excellent. The only other memorable champagne since the epiphanic ponsardin rose.

    Sweet grilled Green peppers , tobacco and cocoa beans. Sweet cassis and sweet fruits. Feminine and vuluptuous. Leafy. Herbaceous sweetness.

    Outburst of green leafy cabbage and green capsicums followed by light leather and a back nose of zincy metallic raspberry like nuances. Reminds me of the small round peppers from Vietnam. Weaker vintage does show on the fruits. Slender and light unlike a pauillac. Fades faster than I wld have liked.

    Dark spicy with minty lift. Almost aussie coonawra like. Lively sour berry fruits and black dark plums with big frontal but lacks on the end. Promising on the nose and initial to mid though. Dark mocha finish.

    Black spiced fruits and lots of Blackcurrants. Very black
    Plums and rich. With lots more years ahead. Austere and classic with stately feel. Quintessential figeac. Will come into a fine gentleman in time to come.

Flight 9 - Aged port with dessert (1 Note)

    This is truly the first port I ever tasted with very dry brandy character. It packs a punch and is still barely put of it's teens. Dark black anise and cardamom scented fruit cake that shows only on the nose but also tampered by dark kirsch and tar. On the palate this is a heavy brandied cherries atop smoke and peat! Knockout port. Not for the faint hearted.
