Dinner at The Chef's Table @ Brooklyn fare

Introduction

My brother Jared secured a difficult-to-get reservation at the Chef's Table @ Brooklyn Fare months back, and was kind enough to invite me. I invited my friend Matt N. Currently, they have no liquor license, and are totally BYO. It's a perfect setup for wine lovers. Lots of great stems, a big ice shelf and service area, and no corkage. I took advantage of this and cleared some space in my Vinotemp.

  • 1996 Verget Chablis Grand Cru Bougros 93 Points

    France, Burgundy, Chablis, Chablis Grand Cru

    Appearance: Deep golden color. Nose: Very sweet and deep. Starts with lemon, oak, and steel. After a bit butterscotch and caramel come through. Palate: Round on entry and then the acid attack w the lemon and steel. Really tight on mid palate. Underneath you can taste the caramel and butterscotch in the palate. Searing lemon, acid and steel w a touch of green apple on the finish. Not your typical Chablis: too big and burly (like a Corton Charlie Matt says). This wine has been a bruiser since release, but really good. Nose: 5/6, Palate: 4/6, Finish: 6/6, Je ne sais quoi (wild card): 1/2 = 16/20 = 93/100

  • 2006 Domaine Sylvain Langoureau Puligny-Montrachet 1er Cru La Garenne 90 Points

    Brought by our kind neighbor at the Chef's Table, J.T. Appearance: Much lighter in color than the 96 Verget Bougros. Nose: Lots of oak and caramel, almost Leflaive-like, but not as deep or complex. After a while, the nose showed much more disjointed, with the oak sticking out, but at its peak it was quite good. Palate: Zingy on palate, again lots of oak. Very juicy and snappy. Nice finish. Nose: 5/6, Palate: 4/6, Finish: 5/6, Je ne sais quoi (wild card): 1/2 = 15/20 = 90/100

  • 1984 Silver Oak Cabernet Sauvignon Alexander Valley 91 Points

    Purchased recently from Benchmark. Nose: Sweet and herbal, plummy, almost minty. Creamy and yummy. Very Silver Oak, but more subdued and balanced than recent releases. Palate: Very soft and plummy w lots of herb. Showing wood - vanilla w dark purple-red creamy fruit. Very plush. A little short on the finish for my taste. Tasty, but not profound. Not up to the standard of the 1978 that I am familiar with. Nose: 5/6, Palate: 5/6, Finish: 4/6, Je ne sais quoi (wild card): 1/2 = 15/20 = 91/100

  • 1999 Domaine Joseph Voillot Pommard 1er Cru Les Rugiens 94 Points

    France, Burgundy, Côte de Beaune, Pommard 1er Cru

    Purchased recently from auction at Winebid. Great old school burgundy nose. Very dung-y and lots of barnyard at first. Then great red spice: like cinnamon/atom balls, sour cherry. Then the dark part of the bouquet comes in: Sauvage, barnyard again with earth and darker fruits - stemmy. Still tight and wound on the palate, needs another 5 years at least, IMO. Barnyard and earth are showing. Stemmy again, lots of structure. Long dusty finish. A classic burg that that was excellent now, but will sing when it hits the sweet spot. Nose: 6/6, Palate: 4/6, Finish: 5/6, Je ne sais quoi (wild card): 2/2 = 17/20 = 94/100.

  • 1987 Joh. Jos. Prüm Wehlener Sonnenuhr Riesling Spätlese 93 Points

    Brought this bottle bc Matt wanted to see how a great producer and terroir show in a "sucky" vintage. I have to rate this wine the palate and finish of the wine twice (using the better score for my final) since they changed so much over the course of the dinner. Appearance: light yellow-green color. Nose: Light, almost spritzy. Crunchy apple, slight botrytis and musty aspect: Earlier on mouth: Great entry, light, almost electric. Lime, green apple and mineral. good acid on middle. End palate dies off quickly into short finish. Nose: 5/6, Palate: 4/6, Finish: 3/6, Je ne sais quoi (wild card): 1/2 = 13/20 = 85/100. Later on mouth: Now shows much more acid and structure on the palate, almost searing. Great power. Where did this come from? Nose: 5/6, Palate: 5/6, Finish: 5/6, Je ne sais quoi (wild card): 2/2 = 17/20 = 93/100. Really overachieved for a Mosel 87. Really a nice surprise. Gotta love JJ!

  • 1992 Joh. Jos. Christoffel Erben Ürziger Würzgarten Riesling Beerenauslese 88 Points

    Purchased recently from Hart Davis Hart. Very dark - almost brown-golden. Maple and deep on nose. Roasted w lots of burnt sugar. Baked pear: Tart Tatin. Christmas spices on palate: clove, cinnamon and nutmeg. Some acid shows on middle and finish, but lacking that complexity, depth and electricity that I would expect from a great BA from JJC's UW. Overall nice, but a disappointment. Nose: 4/6, Palate: 5/6, Finish: 4/6, Je ne sais quoi (wild card): 1/2 =14/20 = 88/100
