Two Kilpsuns from Seven Hills (1991 and 2007)

Introduction

Tasted two vintages of Seven Hills Klipsun on the opposite ends of the age spectrum.

Flight 1 (2 Notes)

  • 1991 Seven Hills Winery Cabernet Sauvignon Klipsun Vineyard

    USA, Washington, Columbia Valley, Red Mountain

    The cork crumbled to bits, so I decanted the wine once I got enough of it out. Advanced appearance, but still plenty of color. The nose opened up before the palate. Earth, tobacco and cassis with some green herbal notes. This was a bit shy at first, but when it opened, wow... Beautiful mocha and bing cherry, followed by black fruit. Still full bodied with plenty of structure intact. A young Seven Hills Cab is laden with acidity, the acid here is integrated allowing for brightness in the fruit despite the age. What amazed me were the firm chalky tannins which emerged after a half hour of air. This has plenty of life.

    Stunning wine which is possibly my favorite Washington bottle of the last few years and on a short list of all time.

  • 2007 Seven Hills Winery Cabernet Sauvignon Klipsun Vineyard

    After the 1991, had to pop a young one. Into the decanter. Youthful purple core. The nose shows more blackberry and spice than anything else. At first, unyielding, so we left it alone for a half hour as that seemed like the magic time on the older bottle. With air, the full bodied palate opened up to beautiful red currant, leather, tobacco and some black fruit lingering about. Balanced beautifully by the trademark acidity and the firm, unyielding Red Mountain tannins. A long finish which haunts you.

    For those outside Washington that don't know Seven Hills, jump on them.
