Introduction

David once again used the summer break in order to put this tasting together. This is the 4th dinner/tasting he has put together with the whole group contributing in order to attend. This years theme of 1986 First Growths was a perfect time to try these wines as it was 25 years from picking. The HB was the WOTN and all of the wines were showing extremely well. All in all it will be fun to revisit every 5 years as they will only get better. For those who have these wines, have patience.

Chilled Maine Lobster, Green Acres Farm Peas, Smoked Arctic Har Roe, Olive Oil "Honey".

Diver Scallop, Australian Winter Truffles, Blackberry-Mint Jus, Green Acres Farm Butter Poached Baby Carrots.

  • 1989 François Raveneau Chablis Grand Cru Valmur 95 Points

    France, Burgundy, Chablis, Chablis Grand Cru

    Super color, green, great nose, vanilla, white peach, little bit of lavender, delicious, wonderful, young and fresh from magnmu. Worth the patience, mature, elegant and educational.

Seareed Saquab, Pickled Klug Farm Cherries, Local morels, Sour Cherry Squab Jus.

Coca and Procini Spiced Venison Loin, Porcini Puree, Herb Emulsion, Nichols Farm Spring Onions.

Morbier, Klug Farm Fruits, Savory Madelines

  • 1986 Château Haut-Brion 98 Points

    France, Bordeaux, Graves, Pessac-Léognan

    Wine of the night. Fragrant, dark color, muted initial nose, great fruit, depth of casis and red berries, loaded, still shy of drinking, big and bold.

    Good, full on the plate, not as much fruit, great bougquet, perfection of elegance awaits!

    Warm, great balance, great color, outstanding on the palate although a bit light.

    Smooth, hint of browness, still tanins to be had, needs more time! Vibrant, youthful.

    France, Bordeaux, Médoc, Pauillac

    Soft, smooth, great color, still tanins to be had, opened up in the glass and so young and unevolved. Lots of potential and could be the longest lived.

Pineapple Bavarian, hazelnut Dacquoise, Apricot Sorbet, Dragee Hazelnuts.

Freshly Brewed LavAzza Coffe, Decaf and Harney and Sons Tea.

    France, Bordeaux, Sauternais, Sauternes

    Great nose, apricot, its the best and to have it at the end of the evening was special. Rich, syrupy, glycerin, liquid gold, sugar. Lovely, long lived. Great color!
