Introduction
Delille Cellars held a vertical tasting of their high end cabernet sauvignon (2004 – 2008). It was hosted by Executive Winemaker, Chris Upchurch, who described their Grand Ciel Estate Vineyard on Red Mountain and what makes it special.

This had a terrific elegant bouquet of floral, citrus, peach, mineral and orange blossom aromas. The palate was crisp, clean and delicious with flavors of peach, mineral, honeydew melon and tangerine. 90+

2008 DeLille Cellars Cabernet Sauvignon Grand Ciel 93 Points

This had a beautiful, powerful and elegant bouquet of cassis, smoke, blackberry, blueberry, cedar, tobacco, cocoa and spice aromas. The palate was smooth, elegant and balanced with flavors of black currant, blackberry, blueberry, black cherry, cocoa, cinnamon, and spice.

2007 DeLille Cellars Cabernet Sauvignon Grand Ciel 94 Points

This had a complex and powerful bouquet of cassis, blackberry, smoke, blueberry, mocha and spice aromas. The palate was complex, elegant and powerful with flavors of black currant, blackberry, blueberry, mocha, black cherry, cinnamon, and spice.

2006 DeLille Cellars Cabernet Sauvignon Grand Ciel 95 Points

This had a wonderful, complex and integrated bouquet of violet, black currant, blackberry, spice, tobacco and smoke aromas. The palate was dense, concentrated and elegant with flavors of black currant, blackberry, dark chocolate, spice and mocha.

2005 DeLille Cellars Cabernet Sauvignon Grand Ciel 95 Points

This had a powerful, dense and layered bouquet of blackberry, smoke, black currant and black cherry aromas. The palate was rich, powerful, balanced and smooth with flavors of black currant, blackberry, black cherry, cinnamon, sage, licorice, spice and mocha. It had a lot more spice than any of the other cabernets. 94+

This had a powerful, elegant and harmonious bouquet of blackberry, black currant, tobacco, black cherry, mocha, and spice aromas. The palate was dense, elegant and smooth with flavors of blackberry, black currant, blueberry, cocoa, mocha, black cherry and spice. It was the most integrated and elegant cabernet of the night. 94+
