Alcohol :: 12% Degorge - Oct-2007. Dosage: 5g/liter. Aged on lees for 4yrs and rest for 10 months for post Degorgement recovery before release to the market. Light golden with small, vigorous bubble. Still a bit tight on the nose with light toast, herbs, earth intermixed with pear, green apple and star fruits. This has opened for about 2hrs which do some good to the sharp acid that I experienced in previous bottle (p&p). The soft entry leads to the rich, subtle, light creamy mouth feel that is quite tasty and juicy with good acid (but not sharp) grip with touch of green apple, star fruits and fennel aftertaste with medium length finish that is fresh and focus. Enjoyable.
Alcohol :: 12% Degorge: Mar-2011. Dosage: 6g/liter. Aged on lees for 3yrs and rest for 5 months for post Degorgement recovery before release to the market. Opened for 2hrs. Light yellow, aggressive bubble. Expressive and focus, a bit austere but compensate by eucalyptus, fennel, earth, green apple, mineral and hint of metal. This is notably sweeter, fruitier and slightly sharper with gripping acidity compared to the BDB that glide through the palate with light saline mineral, citrus flavors that linger on the long, powerful finish. Not bad but I prefer the BDB as it is more precise and detail.
Alcohol :: 12% Degorge: Sep-2001. Dosage: 6g/liter. Aged on lees for 3yrs and rest for 5 months for post Degorgement recovery before release to the market. Opened for 2hrs. Darker golden color with finer bubble gently raise in in the glass. The bouquet is more developed and matured compared to the bottle that degorged in Mar-2011, quite oxidative that display lots of nuttiness and honey in the core accompany by yellow flower, orange, pear as well as metalic minerality, this is a different beauty if you like your Champagne oxidative. However, deep inside the aromas there is hint of TCA and the palate re-assure me that this was a cork bottle, no fruits and disjointed with TCA. A pity....
Alcohol :: 12% Degorge: Sep-2001. Dosage: 6g/liter. Aged on lees for 3yrs and rest for 5 months for post Degorgement recovery before release to the market. Opened for 2hrs. 2nd bottle. While this bottle display similar oxidative note of honey and toasted bread, nuttiness, this is fresher and more complex than the 1st bottle with brown sugar, lentil, red apple, focus and perfume, especially the brown sugar aromas that's really attractive. The acid has rounded up and the sweet green and red apple, sweet lemon giving it a great balance and the light spiciness added complexity to it, this bottle show that this cuvee will need at least 5-7yrs to mature and develop better harmonious. The mineral infused long finished with good weight and brown sugar aftertaste with freshness. I pretty like and lover of oxidative style Champagne will find this enticing too.
Alcohol :: 12% Degorge: 2010 July. Dosage: 5g/liter. Took 16yrs to produce. Opened for 2hrs. Very expressive on the nose with bold, sweet core that display lots of ripe yellow fruits, peach, indian spices with touch of oxidative nutty notes. This is more forward compared to its 96 sibling and also bolder with the sweet ripe fruits. Rich and sweet entry with slight sharp but very complex mouth feel formed by the mixture of sweet peach, citrus, bitter cocoa, nut, spices, mineral, earth and a little bit of salinity. This has good depth and bright acidity to give the sweet fruits a good buffer but still, I feel the sweetness is slightly overwhelmed the acid hence not as as focus and precise compared to the 96. Finished is long, juicy and sweet. I would love to try this in another 3-5yrs time to see if the sweetness will tone down and get better balance with additional bottle aging. 88-89+
Alcohol :: 12% Degorge: 2009 Jan. Dosage: 4g/liter. Fermented 10months in small oak barrels, rest for another 9months. 10yrs aged on lees with 2yrs post Degorgement recovery. Opened for 2hrs. Similar to the 1995, this is super intense and powerful, still very youth and tight that giving away hint of sweet tone, mineral, rubber, oxidative note and fennel with lot of material that bury underneath. Mouth filling, expansive, very rich and structured. This a massive with it's oxidative profile but well delineated and remain good sense of grace and finesse thanks to the vibrant, ripe acidity backbone that support the flesh firmly. I pretty like the focus here and the tight finished is complex and very long with orange peel, ripe lemon and grape fruits that's goes on and on and built up more power towards the end. This will take long time to come around but once it does, this will be memorable. 91-94
