Introduction

Always great to start a brand new year with Champagne.

    Alcohol :: 12.5%
    Popped and poured. The nose was pretty closed and needed more air (min 30mins). Expressive citrus, lemony aromas on the nose with yeast, white bread, earth and green apple. While this doesn't possess the depth of the Cedric Bouchard, this is still very delicious. Refreshing, firm acid spine balance by good flavors concentration of green apple, pear, citrus fruits, mineral and touch of herbs and nuttiness. The finished is long and lingering with citrus, green apple aftertaste. Similar to previous bottle, this is a Champagne with high QPR.

  • 2005 Roses de Jeanne / Cédric Bouchard Champagne Blanc de Noirs Les Ursules 91 Points

    From 2005 fruits. Popped for 30mins and served. Unusually expressive, loaded with dark cherry fruits, grapefruits, floral, mineral and dash of nut and honey, very deep and layer. Entry was soft, with bubble gently expand across the palate and bring out the complex flavors of grapefruits, orange peel, mineral and revealed sweet dark fruits with more air, all backing up by firm ripe acid backbone. Lovely weight and purity here. Though the finished fall a little bit short that seem the transition between the very rich and weighty mid palate to the finish isn't perfect. This wine remain delicious and gained a little bit more weight on the entry and finished. 2hrs in the glass, the wine reached the perfect balance point: perfect transition from entry to the super long, intense juicy finish with lot of sweet dark fruits and mineral. Very showy and a little bit bold (I prefer my wine with a little bit of restraint / tension) but still relatively quiet in Blanc de Noir category.

  • 1993 Château Pajzos Tokaji Esszencia

    From a mini 100ml bottle. Popped and poured. Dark like motor oil. I thought this 100ml bottle will show better than the normal 500ml bottle, but without any luck, this showed exactly same as the 500ml bottle. Very deep but also primary aromas of dried raisin, prune, wax and dried apricot. Very sweet entry with massive concentration of prune, honey, dried raisin juices hit on the mid palate. There was sufficient amount of acidity kick in at the back to avoid this super thick juice being cloying or sticky. Opulent finish. This wine seem never age...... Same question again, when would the sweetness, acid and dry extract integrated together to hit the drinking window? Hopefully when I'm still alive. Left 50ml in the bottle and will access again in another 2weeks.
