    2006 Chablis Grand Cru Grenouilles, Les Chablisienne (from demi-bouteille)—With foie gras, confit d’abrigots on “ginger snaps”—Quite a good match if all of the elements of the dish are combined. Easy on the apricot or the wine turns bitter. More green apple than citrus. The longer the wine sat, the more pronounced the oak until it finally overwhelmed on the final sip.

    2007 Chablis 1er Cru Montée de Tonerre, Louis Michel (from demi-bouteille)—With dos de bar, artichotes au poivre, crème de caviar—No oak thankfully. The lemon acidity is very bright. The finish is a little short so it doesn’t hold up to the caviar. I like the minerality but need more taste of the sea to go with the food. At the end it shows a little sweet-tart pink grapefruit which is really weird.
