Private dinner sponsored by the parent company of the winery. Invited by Bear Dalton of Spec's. Nicolas Audebert the wine maker was in attendance. He made Krug for the five years prior to the Argentian assignment. We started the evening with Krug Champagne Grand Cuvee Brut from 750ml bottles. Then we had 2002, 2004, 2005 and 2007 vintages of Cheval des Andes with the dinner. I started with the Wild Boar Chili, then steak on top of some mashed potatoes.

Dark wine. Very silky and almost creamy. This was my favorite of the night among the 2002, 2004, 2005 and 2007 vintages. The taste seemed to leap out with the Wild Boar Chili that I had at this time. This wine had been decanted for about two hours and actually poured in the glass about an hour before I tasted it.
