Introduction

Alex Jagger invited eight of us to bring a pre-91 Beaune or two. And they showed brilliantly. The Drouhin Mouches is markedly glossier than the others and the 85 and 90 were the stars here, but all were delightful in their own way.

Flight 2 - with crab ravioli, samphire, brown shrimp, fondue of leeks and bisque sauce (2 Notes)

Flight 3 - with thinly sliced rump of veal, fondant potatoes, white asparagus, salsa verde, rocket and roasting juices (4 Notes)

Flight 4 - with wood pigeon, roast foie gras, girlies, crêpe parmentier, girolles and shallot purée (3 Notes)

Flight 5 - with cheese (3 Notes)

Flight 6 (1 Note)

    Basically with a sauternes it comes down to: is it sweet? is it rich? is it fresh? and if it's yes to all three you have a winner. As here.
