Introduction

We celebrated Hiro's birthday in style at Providence. Fantastic drinks at the bar by mixologist Zara, 7 course meal, Champagne, red and white Burgundy, a few other bottles, and topped it off with 1977 Porto, cheese cart, and dessert! Thanks for inviting us, and for all the great wines and exceptional company!

    Pale rose color; Slight yeasty-earthy component with earthy forest berries in the nose; good acidity, still very fresh with some mineral complexity.Very good. 91?

  • 1995 Moët & Chandon Champagne Cuvée Dom Pérignon 93 Points

    Medium gold color; nose of tree fruit, sour dough bread and canned tuna fish oil (very prominent); powerful mouth--rich, structured, good balance, fine bubbles with exceptional weight on the palate. This was superb and enjoyed it with sashimi, but preferred to sip it alone. Drinking very well right now.

    Light yellow with subtle copper hue; bright nose of tart apricot, under ripe tropical fruits, slight wax and light tea; light on its feet in the mouth but still concentrated, high acidity and a little saltiness in the back end with great tension. could use 5 years but I enjoy the vitality of this new vintage. This was great with salty butter and bacon bread! A bit too powerful for sashimi, but the salt seems to work well with this one. Maybe 92

    darker gold color; appealing nose of caramel, burnt toffee, light nuttiness and oxidation. Relatively high acidity in the mouth, more maderized notes with caramel light minerals, and nuttiness. Past its prime for sure, but interesting and fun to try anyway.

    Medium yellow color; expressive nose of crushed rocks, metalic minerals, and a core of slight underripe pit fruit; great tension, excellent balance, smooth and slick with good concentration. Long finish. Really loved this.

    Vibrant pale ruby with purple hues; Really lovely nose of small forest berries, a little sous bois, pine sap and ferns--fresh as a walk in the woods on a cool morning! Same on the palate, with a touch of minerality, good intensity of flavor, very well balanced but with seemingly very low tannins. Still has plenty of years ahead of it, but will the low tannins hinder its ageability? So far it's held onto its youth very well. WOTN, really loved this. With veal tenderloin.

    Obvious but judicious use of oak here with good concentrated blackberry-black cherry CA pinot fruit; a little underlying minerality, not heavy but medium plus intensity, not too complex; very nice balance all around.

    Just off-dry, most of the sweetness has resolved; intriguing herbal note with nectarine; medium - body, medium+ acidity; this could have been a trocken--cannot remember. Very fun, intersting profile, in great shape, a little light and different for the cheese plate.

    Notes of soft raisins and walnuts and fig paste; medium - sweetness; silky smooth, still youthful, excellent balance, great with the Rogue River Blue. Try again in 20 years(!)
