Flight 1 - Aperitif (1 Note)

  • 2003 Dom Pérignon Champagne 91 Points

    France, Champagne

The temperature is slightly on the low side, hence the nose is quite muted with some expression of sweet pear, peaches, green apple, yeast as well as mineral and honey core. More yellow fruits and saline note emerged when the temperature goes up, powerful and broad shoulder. Good but it is a bit fat which seems lacks a bit of the precision and focus. I was surprised how accessible was this 03 DP compared to the previous bottle which I drank in earlier this year. Powerful, rich, lush and sweet, there is no hard edge here. I believed the sweetness comes from the vintage as well as the dosage. I do hope the sweetness will be able to mellow down with time (for now it seems lack of the acidic backbone for the long term) so it will have better focus and delineation. I'm not complain though as this was drinking really well.

Flight 2 - Flight 1 - 61 Lynch Bages & 66 Talbot (2 Notes)

  • 1961 Château Lynch-Bages 91 Points

    France, Bordeaux, Médoc, Pauillac

A light herbaceous note kicking off the mature, quite broad bouquet of cedar, pencil leads, crushed rock intermixed with some dried blackcurrant and blackberry fruits. On the palate this was indeed appealing, still has a touch of tannin grip. It slowly reveals more power toward the finish. Still fresh and energetic but this is certainly not packs with the depth and scale for a top tier claret. However, I ain't complaining as this is drinking well for the 1st hr of serving.

  • 1966 Château Talbot 86 Points

    France, Bordeaux, Médoc, St. Julien

Feminine was the first impression of this mature St-julien. Some dried black fruits, dried flower accompany by soil and tobacco leafs. Maybe due the profile / style of the chateau, very soft, silky on the palate. Quite straight forward with subtle nuances and finish. Need to drink up as even with Dmag format, the wine is fading rather quickly after served.

Flight 3 - Flight 2 - 55 Latour & 61 Ducru (2 Notes)

  • 1955 Château Latour Grand Vin 95 Points

    France, Bordeaux, Médoc, Pauillac

En Jeroboam. This has to be the most powerful, vibrant wine for the night. It has all the classic bouquet of a Pauillac, all mold together impeccably and seductively: cedar, pencil shaving, dried flower, crushed rock, blackcurrant and some dried dark fruits as well. It is broad, large scale, weighty with unbelievable intensity and inner power that quickly coated and numb the mouth. There are still some fine tannin kick in after the mid palate for better grip but there is sufficient of crunchy black fruits give it the right balance and able to develop more in the bottle. Everything is in a total harmony, power without weight. There is this seductive cedar and spice box inner perfume waving in the mouth from the entry to the incredibly long, ethereal finish. Oh my!

  • 1961 Château Ducru-Beaucaillou 95 Points

    France, Bordeaux, Médoc, St. Julien

En magnum. A legendary Ducru, many said so. PnP, reveal some funky note with some dried dark fruits, mint and cedar. On the palate it was quite tannic and tight, not really reveal the legendary status, at least I'm not convince. However, the wine improves drastically over the next 60-90mins. The fruits is alive again, become fresher, sweeter and not as dried as the 1st serving. Utterly complex and seductive bouquet here: mint, cedar, floral, sweet blackcurrant fruits as well as mineral and cigar box, elegance and fine, hard not to like it. WOW, the palate is even more captivating. Finesse and harmony comes to mind. Still going strong with excellent intensity, energy as well as detail layer of complexity. The tannin grip at the back end keep the finish going on and on, with juicy sweet dark fruits and dried tea leaves aftertaste.

Flight 4 - Dessert - 55 Taylor (1 Note)

  • 1955 Taylor (Fladgate) Porto Vintage 95 Points

    Portugal, Douro, Porto

This is a extraordinary Taylor and it stands at the same level of 1955 Latour & 1961 Ducru at the same night. I wasn't impress by the bouquet at first, as the funky and fishy note masking the underlying fruits and spices as well as taken away the purity and balance of the wine. Decanted for 30mins, and the funky and fishy note blew off. Oh my, wasn't this fantastic? Such elegant, complex note of spices, X'mas cake, sweet cherry fruits, preserved plum and savoriness. On the palate it boosted with energy, freshness and purity. These are the most important character for an old wine, at least to me. It didn't taste like a 57yrs old wine, I would have guessed this was from the 70s. The soft, mild inner perfume of floral and X'mas cake lingering from the entry to the finish, together with sweet plum and cherry fruits, firm but silky tannin that formed the perfect harmony, luscious mouth feel and leads to the endless finish. Port hardly get better than this.
