Introduction
With Anthony Bourdain doing a No Reservations episode in Burgundy, Tooch and I opened up some burgs. I brought some food by from the Savoy in Wicker Park since seafood felt like it was needed as well.

I loved the episode and enjoyed the wines. What isn't there to like. A fun night with good conversation and good wines.
2010 Domaine Henri Boillot Savigny-lès-Beaune 1er Cru Aux Vergelesses Blanc 91 Points
France, Burgundy, Côte de Beaune, Savigny-lès-Beaune 1er Cru
nose: fresh and balanced nose with very good tones of red apples, citrus tones, creams, pears and some flint tones as well. Nice depth too gives this some good style.
taste: Medium/full bodied with medium/high acidity. The structure is showing the youth of the wine, but still with very good tones of red apples, pears, citrus and flint tones.
overall: this is young, but with good promise. Well balanced with nice freshness on both the nose and palate.

2001 Domaine Pavelot (Jean-Marc et Hugues) Savigny-lès-Beaune 1er Cru Aux Guettes 91 Points

nose: was nice off of pop n pour with a dark base to the tones of dark spices, florals, and dark red cherries with some hints of earth and perfumes. There is nice complexity to this, but it is lacking some depth.
taste: medium body with medium+ acidity and nice tannins still. On the prettier side with a silky feel and tones of dark spices, earthen tones, florals, and some dark red cherries.
overall: I didn't check in on this later like tooch did. So, it didn't fall apart for me. I enjoyed this as it was pretty and coming off as near it's full drinking stage.

2010 Domaine Servin Chablis 1er Cru Montée de Tonnerre 91 Points

nose: nice and aromatic nose with tones of seashells, flint, crushed rocks, lemon zest and white florals. Nice depth with the nose being everything one would want from a chablis.
taste: light bodied with very crisp medium/high acidity. The structure is a little foreboding, but not too harsh along with fresh tones of seashells, flint notes, crushed rocks and lemon zest.
overall: This is a very nice servin. These do have oxidation problems, so it's best to deal with the structure right now. Still, this is a really good chablis that is exactly what one would look for.

2006 Simon Bize Savigny-lès-Beaune 1er Cru Aux Vergelesses 89 Points

nose: fairly tight nose with dark tones of dark red cherries, spices, earth tones and some purple florals. Lacking a little bit of depth though.
taste: Medium bodied with medium+ acidity and some good tannins that are on the chewier side. Youthful with tones of dark red cherries, spices and purple florals.
overall: this is still very young. I would like to see where this will be in another 5 years. There is good material, but it is a bit closed off right now.
