Sue hosts the January tasting every year and it is always a Champagne tasting. This year she chose vintage Champagnes. With the vintage wines she put out quite a spread- caviar, oysters, clams, pates, etc. For dinner, she served a perfect herb-roasted beef tenderloin, potatoes and roasted root vegetables. All wines were tasted nonblind.
1995 Charles Heidsieck Champagne Brut Millésimé 92 Points

Yellow color. Nutty- cashew, pear, apple and toast qualities. Fine bead, with flavors of baked apple, biscuit and pear flavors. Nicely balanced; long finish, 92+ pts.

Pale color with a persistent mousse and fine texture. Apple, mineral and lemon zest notes. Citrus, tart apple, mineral and stone flavors with bright underlying acidity. Showed very well tonight, and the Champagne of the night for a few.

Took a little time in the glass to open. An odd cheezy aroma blows off leaving yeast, marzipan, stone and wet dough aromas. Medium coarse bead, with apple and toast flavors. Nice finish.

Initially quite musty, this needed some time for the funk to blow off and open up. Aromas of frangipane, baked apple, caramel and dough. Medium bead. Pear, creme brulee, caramel apple, honey, almond paste and wet dough qualities on the palate. Medium(-) finish. Nice complexity.
